This is a big weekend. We have Cinco de Mayo and the Kentucky Derby. I view both as a great excuse to celebrate. Am I right?! I am not a horse racing fan, but we always watch the Kentucky Derby. I feel the best way to watch the race is with a Mint Julep in one hand and a slice of this pie in the other. This pie is a cross between a chocolate chip cookie and pecan pie. It is great slightly warm with a big dollop of bourbon whipped cream.
How to Make Kentucky Derby Pie
This dessert is very easy to make. Melt butter, and cool for about 5 minutes. Combine flour and sugar. Whisk in melted butter, eggs, and vanilla. Stir in chopped pecans. Sprinkle chocolate chips on the bottom of the pie crust. Pour pecan mixture over chocolate chips and bake. Top the pie with a quick bourbon whipped cream.
- This pie uses a regular frozen pie crust NOT a deep dish pie crust.
- Can substitute a graham cracker crust for the pastry pie crust.
- You can omit the bourbon in the whipped cream if you prefer.
- Can substitute walnuts for the chopped pecans in the pie.
- The pie will keep up to 5 days tightly wrapped at room temperature.
- Can Kentucky Derby Pie be frozen? Yes! Bake the pie and cool completely. Wrap the pie in plastic wrap and place in a freezer bag and freeze. The pie will keep up to 3 months in the freezer.

Kentucky Derby Pie with Bourbon Whipped Cream

Pie
- 1 (9-inch) regular frozen pie crust, not deep dish
- ½ cup unsalted butter
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla
- ⅔ cup all-purpose flour
- 1 cup finely chopped pecans
- 1 cup chocolate chips
Bourbon Whipped Cream
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- 1 Tbsp Maker’s Mark Bourbon
Instructions:
- Preheat oven to 325ºF.
- Melt butter, and cool for about 5 minutes. Combine flour and sugar. Whisk in melted butter, eggs and vanilla. Stir in nuts.
- Sprinkle chocolate chips on the bottom of the pie crust. Pour pecan mixture over chocolate chips.
- Bake for 1 hour. Serve with Bourbon Whipped Cream.
- To make the cream, Whip together heavy cream, powdered sugar and bourbon. (I chill my mixing bowl in the freezer for 5-10 minutes before adding the cream and sugar). Whip at high speed for 1-2 minutes.

Is there a way to adjust recipe for deep dish pie crust? That’s all my grocery store had. Thanks for a speedy answer.
I’m sure there is, but without further recipe testing, I can not give you the measurements.
Should I bake the store bought crust before filling it? Or just fill it uncooked, cold?

I made this pie using six small individual paper tart pans without a bottom pie crust. I used non-stick spray. I also added a few tablespoons of Makers’ Mark. Turned out great. I’m up at approx 6,500 elevation and I did not adjust the recipe but for the MM. I baked them for 40 minutes. Will be making this again!
Do you just put the ingredients in the frozen pie crust or should you thaw or bake it first?
I just used the crust frozen. It thaws out quickly.
