Pin This RecipeThis cake is a great way to finish off your Memorial Day feast next weekend. This is a variation of other poke cakes on the blog. Like the others, this cake is easy to make and tastes great. It is best to make this cake at least a day before you want to serve it. It gets better the longer it sits in the refrigerator. It takes a lot of will power not to just dive into the cake, but trust me. It is worth the wait!
As I said, this cake is super easy to make. Start with a box of strawberry cake mix. Prepare the cake according to the package directions and bake in a 9×13-inch baking dish. While the cake is baking whisk together strawberry ice cream topping and sweetened condensed milk. Remove the cake from the oven. Poke holes all over the cake and pour the sweetened condensed milk over the cake and let it cool completely. Once the cake has cooled, top it with fresh whipped cream and fresh strawberries.

Strawberries and Cream Poke Cake
Equipment:
Ingredients:
- 1 box strawberry cake mix, plus ingredients to make cake
- 1 (11.75-oz) jar Strawberry ice cream topping
- 1 (14-oz) can sweetened condensed milk
- 1 cup chopped fresh strawberries
- 1 cup heavy whipping cream
- ¼ cup powdered sugar
- 1 tsp vanilla
Instructions:
- Bake cake in a 9×13-inch pan according to direction on the package.
- While cake is baking, mix milk and strawberry topping until well blended. When the cake is done and while it’s still hot, poke holes in it with a fork or straw. Pour milk mixture over the cake. Allow cake to cool completely.
- Sprinkle chopped strawberries over cake.
- In a chilled bowl, whip together heavy cream, powdered sugar and vanilla. Whip on high speed of an electric mixer for 1-2 minutes. Spread over cake. Keep refrigerated until ready to serve.

Delicious. This was my first time making a poke cake, so of course I learned a few things. I used a straw to poke holes in my cake and don’t think the holes were big enough to take in a decent amount of condensed milk mixture. I’ve read other poke cake recipes since that said to use the end of a wooden spoon to make the holes.
Next time (because it was that good, there will be a next time) I don’t think I will add powdered sugar to my whip cream, I typically don’t and the cake is truly sweet enough, I may also add the strawberries atop the whipped cream. Either way I highly recommend this cake. So yummy.
Sounds great! Could I use store bought frosting instead of the cool whip? I already have whipped cream cheese frosting at home.
You can use anything you want.
I used strawberry jam in place of the ice cream topping, and store bought cool whip instead of the whipping cream and everyone loved this cake! It was delicious and easy! Thanks for the great recipe!
Not sure it's going to be that sweet. But you could always use some greek yogurt in the mix to put a richness and a bit of tartness back in.

I always make my poke cakes with sweetened condensed milk. Let me know how evaporated milk works!

This looks yummmmmy! but is it too sweet with the sweetened condensed milk? Could you mix the strawberry topping with just evaporated milk instead?
