Disappearing Marshmallow Blondies

These are called Disappearing Marshmallow Blondies because the marshmallows disappear when they baked. I would call them Disappearing Marshmallow Blondies because they disappear off the plate!

These blondies are SO good. They were super soft and chewy.  I especially loved the hint of peanut butter. I could not stop eating them! These bars travel well and would be a good lunchbox treat or an easy tailgating dessert! (Only a few more days until college football starts!)

Have a glass of milk nearby, you are going to need it to wash these awesome blondies down!

Disappearing Marshmallow Blondies

  • ½ cup butter
  • 1 cup peanut butter chips
  • 2/3 cup packed brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 ½ cups  flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 cups miniature marshmallows
  • 1 cup chocolate chips

Preheat oven to 350 degrees. Grease a 9×13 inch pan.

In a small saucepan, melt the peanut butter chips and butter together over low heat, stirring until smooth. Remove from heat and cool for 5-10 minutes.

In a large bowl, combine brown sugar, eggs, and vanilla.  Stir in the melted peanut butter chips. Add flour, baking powder, and salt. Stir until smooth. Stir in the marshmallows and chocolate chips.

Spread the batter evenly into the prepared 9×13-inch baking pan. Bake for approximately 20 minutes. Cool and cut into squares.
