Easy Make-Ahead Breakfast Recipe

This Overnight Coffee Cake is a family favorite. Tender cake topped with a delicious cinnamon streusel topping. Assemble the cake before you go to bed and bake it the next day. This is a great recipe for hectic weekdays, lazy weekend mornings, and holiday mornings. Add this cake to your menu ASAP! It is sure to be a hit!

How to Make Overnight Coffee Cake

This cake is very easy to make with only a few simple ingredients. Grease and flour a 9 x 13-inch pan and set aside. In a large bowl, combine flour, white sugar, brown sugar, baking soda, baking powder, salt, and cinnamon. Add buttermilk, butter, and eggs to the dry ingredients and mix on low speed on an electric mixer just until combined. Pour the cake batter into the prepared pan. In a small bowl, mix together brown sugar, pecans, and cinnamon. Sprinkle the brown sugar mixture over the top of the cake. Cover the pan with plastic wrap and refrigerate overnight. The next morning, remove the dish from the refrigerator. Preheat the oven, and bake coffee cake until a toothpick inserted into the center of the cake comes out clean.

  • To make Homemade Buttermilk combine 1 cup of milk with 1 Tablespoon of white vinegar or 1 Tablespoon of Lemon juice. Let the mixture sit until it starts to curdle, about 5 minutes.
  • You can bake the cake right away if you don’t have time to let the cake sit overnight.
  • Feel free to use walnuts or almond slivers. You can also omit the nuts altogether if you aren’t a fan.
  • Can substitute pumpkin spice seasoning for cinnamon.
  • Sometimes I add some chocolate chips to the cake batter.
  • You can cut the recipe in half and bake it in a 9-inch square baking pan.
  • Store leftovers in an air-tight container.
    • The cake will keep 2 or 3 days on the countertop.

Cinnamon Pecan Coffee Cake

This is our favorite coffee cake recipe! We love all the yummy cinnamon flavor and pecans. This goes great with bacon, eggs, and hash browns. We usually eat this for breakfast but we’ve also been known to serve a slice of the warm coffee cake with a scoop of vanilla ice cream. Yum!

Instructions:

  • Combine first 7 ingredients; add buttermilk, butter and eggs. Beat at low speed of an electric mixer just until moistened. Beat at medium speed for 3 minutes. Pour into a greased and floured 9×13-inch pan.
  • Combine topping ingredients. Sprinkle over batter. Cover and refrigerate 8-12 hours.
  • Remove cake from oven. Preheat oven to 350ºF.
  • Bake uncovered in the preheated oven for 30-35 minutes.

  1. They have come a long way with gluten free flour. Do you think it would work with that? Not sure if the sitting overnight would effect it? Or is it just as good to make & bake right away?
