One of my favorite quick side dishes is to open a box of Rice-A-Roni or Pasta-Roni. They taste good and are super easy to make. I saw a version of this recipe floating around on Pinterest and thought it sounded like Pasta Roni.  It had two of our favorite flavors, garlic and parmesan, so I decided to give it a try. OMG – SO delicious and super easy! This is a one-pot dish and it doesn’t require precooking the noodles. They cook right in the pot! Awesome!

We served the noodles with one of our favorite grilled chicken recipes, Rosemary Ranch Chicken. The noodles tasted great and were almost as easy as opening a box of Pasta-Roni. This will definitely be a regular side dish for us. I am already planning on making these again this coming weekend.

Ingredients:

Instructions:

  • In a large pot, heat olive oil over medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes. Add the butter; cook until melted. Add the salt, pepper and chicken stock.
  • Turn the heat up to high and let come to a boil. Add the pasta and cook for 4-5 minutes. Once pasta is tender, reduce the heat to medium and stir in the parmesan, cream and parsley until cheese is completely melted. Remove from heat and serve immediately.

Notes:

Can use freshly grated parmesan cheese or the green can.

  1. I made this on a whim one night because I was craving the boxed stuff! We had everything on hand but the heavy cream. I used half and half plus 2 tbsp of flour to thicken it up and we couldn’t get enough! I can’t wait to try it again with the heavy cream 😋

How many servings are in this?

BTW, I’ve made this several times: YUMMY !!!!!!!!!!!!!!!!!!

Now I live with a huge family now! I like to put all dry ingredients in a mason jar so it’s ready when I want to make it.

  2. Really yummy recipe. I used fusilli/ spiral noddles so of course it required double or more water and more cook time but that’s expected because it wasn’t angel hair. Otherwise cooked as is and was delicious, even more so than the boxed stuff.

  3. Absolutely delicious! Do not make any changes to this perfect recipe! Other than doubling! Packaged noodles are the worse. Thank you for sharing the perfect pasta side dish.

    1. I have only made this as written. You can try it. Without the extra fat from the heavy cream, it might not thicken us as intended.

I have had to do GF for someone with the rice a roni. I add rice noodles and I fount it took a little longer.

      Do’n’t walk away when cooking.

  4. This is just what I’ve been looking for! I love mixing up a main dish with different sides, and this is just what I needed. So good, and could go with so many things. The boyfriend also approved!

    1. We just made this tonight and it was a hit! I did half grated/half shredded parm and it was delish!

  5. This was so good and so easy!! This is perfect if you don’t have much time to prepare a meal! Thank you for this recipe Stephanie!

  6. So you don’t drain the pasta before adding the cream and cheese. It just seems like it would be to liquidy.

  7. I've made this at least a dozen times, it's my favorite pasta side! I was thinking of trying it with a tri-color rotini instead of angel hair. What do you think?

  8. My family raved about this recipe! I made a double batch and it's almost gone! Absolutely delicious! Served it with meatballs. So easy, will be making this again soon.

  9. This is absolutely delicious and one of my husband's favorite side dishes! It's great to make your own so that you can control the amount of salt that goes into a recipe. The only change I make is to use freshly grated parmesan cheese. That green can stuff is full of preservatives and sawdust!

  10. Wow!!! I had my doubts… as I've not done a one-pot noodle dish in this manner that wasn't a casserole.
This was FANTASTIC! My teenage boy was helping so he would know another easy dish to DIY when out on his own. I rarely buy boxed noodle dishes so this was a welcome treat.
I doubled the recipe, using a full box of angel hair pasta, boiled for about 8 minutes, and kept the Parmesan amount at 1c per a comment by another here. In hindsight, doubling was unnecessary as we now have lots of leftovers. Served with Parmesan breaded halibut, and roasted Romanesco with garlic & onion. Perfect!
Thanks a bunch, we will be making this one again…

  11. Ever since they discontinued Pasta-Roni Creamy Garlic (the one with the corkscrew pasta) I have been looking for an alternative. This sounds great and can't wait to try it–using corkscrew pasta of course!

  12. I would buy boxed pasta sides just to keep onhand for quick dinner……figured out how to make it with real ingredients and it is so easy and yummy! I will not be buying anymore boxes again! Thanks for sharing. This side will be on our plates next week!!!!

  13. I have made this recipe. th only change I will make next time is to use less parm. LOVED this recipe…Will definitely make again!!

  15. It's hard to think about hot pasta when it's so warm in sunny California, but I think I'll have to make an exception for this one!
