The Very BEST Steak Marinade

We grill skirt steak a lot at our house. Have you ever tried skirt steak? It is one of our favorite cuts of steak. It cooks quickly and packs a TON of flavor. While you can just season skirt steak with just some seasoned salt and black pepper, we always marinate our steaks. This Brown Sugar Steak Marinade is our favorite way to marinate skirt steak. Hot sauce, Worcestershire sauce, onion, garlic, vinegar, olive oil, & brown sugar. The hot sauce and brown sugar give the marinade the perfect balance of sweet and spicy. We make this at least once a month. We like this better than any fancy steakhouse steak!

How to Make Brown Sugar Steak Marinade

This marinade is super easy to make with only a few simple ingredients. In a large bowl, whisk together hot sauce, brown sugar, vinegar, Worcestershire sauce, onion, garlic, and olive oil. Place the skirt steak in a large zip-top bag, freezer bag or shallow container. Pour marinade over the meat and refrigerate for 30 minutes or up to overnight.

When you are ready to eat, prepare the grill and remove the steak from the marinade. Cook the steaks over direct heat until it reaches your desired level of doneness.

Helpful Tips & Frequently Asked Questions

  • Skirt steak is very thin and only needs to cook a few minutes on each side to reach medium-rare to medium. Be careful not to overcook the steak!
  • I use Frank’s Hot Sauce. You can use regular hot sauce or wing sauce. I have also used Crystal’s Hot Sauce.
  • Is the steak super spicy? Even though this is marinated in a cup of hot sauce, it doesn’t have a lot of heat. It tasted delicious. The sweetness from the brown sugar balances out the heat in the hot sauce.
    • If you are worried about the heat, feel free to adjust the amount of hot sauce to your personal preference.
  • Can I use this marinade on any cut of steak? You can use this marinade on your favorite cuts of meat – ribeyes, new york strip steaks, flat iron steak, flank steak, or sirloin steak.
    • This is also a good marinade for pork or chicken breasts.
  • We use a charcoal grill. Skirt steak only takes a few minutes of grilling over direct heat.
    • Can cook the steaks on a gas grill over medium-high heat.
    • The cooking time will depend on your personal preference for doneness.
    • Use a meat thermometer to check the internal temperature.
      • Rare – 120ºF – Cool Red Center
      • Medium Rare – 130ºF – Warm Red Center
      • Medium – 140ºF – Pink Center
      • Medium Well – 150ºF – Slightly Pink Center
      • Well Done – 160ºF – No Pink, Cooked Through
  • I don’t have a grill, can I cook the steak on the stove? Yes! Heat some oil in a skillet or grill pan until hot. Cook the steak for 2 to 4 minutes per side.
  • Let the steak rest for about 5 minutes before slicing against it with a sharp knife the grain of the meat into thin slices.
  • Store leftovers in an airtight container in the refrigerator.

What to Serve with Spicy Brown Sugar Steak

We think this is the perfect marinade. This recipe always makes the most tender steaks that are packed full of great flavor. We like to make quesadillas for lunch with the leftovers. SO good! We serve the steak with some potatoes and a salad or green beans.

  • Whisk together first 7 ingredients. Pour over meat and refrigerate for 4 hours, up to overnight.
  • Remove meat from marinade and grill until meat has reached desired temperature.
  • Skirt steak cooks really quick. It only takes about 3 to 4 minutes per side.

Notes:

I used Frank’s Hot Sauce. You can use regular hot sauce or the wing sauce. I have also used Crystal’s Hot Sauce.
We always marinate our skirt steak the night before cooking it. Our philosophy is the longer the better.
Even though this is marinated in a cup of hot sauce, it doesn’t have a lot of heat. It tasted delicious. The sweetness from the brown sugar balances out the heat in the hot sauce. You taste more of the hot sauce flavor than the heat.
If you are worried about the heat, feel free to adjust the amount of hot sauce to your personal preference.
We love to use skirt steak with this marinade, but it would also be great on ribeyes, flank steak, or sirloin steak.
To cook the steak on the stove heat some oil in a skillet until hot. Cook the steak for 2 to 4 minutes per side.
We prefer to cook this steak to Medium-Rare or 130ºF internal temperature.
Let the steak rest about 5 minutes before slicing against the grain into thin slices.
