Tiramisu Brownie Bites

I needed a quick bite-sized dessert for a recent dinner party. I was making Italian food, so I wanted an Italian flavored dessert. I love brownies, so I thought what about Tiramisu Brownie Bites? 
I used a box of Ghirardelli brownie mix and substituted coffee for the water in the mix. I whipped up a light mascarpone frosting to go on top. OMG – delicious! The frosting was so light and scrumptious. It was the perfect ending to the meal!

Tiramisu Brownie Bites

  • 1 (20-oz) box brownie mix, plus ingredients to make brownies
  • coffee
  • 1 cup heavy whipping cream
  • 1 ½ tsp cinnamon
  • 1 ½ tsp Kahlua
  • ½ cup powdered sugar
  • 4 oz mascarpone cheese, softened

Preheat oven to 325. Spray a mini muffin pans with cooking spray or line with mini cupcake liners.

Prepare brownie batter according to package directions, substituting coffee for the water. Scoop batter into mini muffin pans, filling 2/3 full. Bake for 18 minutes. Cool and remove from pan.

To prepare frosting: In the bowl of an electric mixer, combine heavy cream, Kahlua, cinnamon and powdered sugar. Whip until the cream holds a medium peak. Carefully fold in mascarpone cheese. Frost cooled brownie bites.
