This Beef Enchilada Soup is one of the best soups I’ve ever eaten. Super simple to make and it tastes amazing! The best part about this recipe is you just dump everything in the slow cooker and let it simmer all day long. Stew meat, enchilada sauce, cheese soup, black beans, Rotel, corn, beef broth, oregano, and cheddar cheese. SO much flavor! Whip up some cornbread and you are set!

How to Make Beef Enchilada Soup

This soup is effortless to make with only a few simple ingredients. Cut stew meat into bite-sized pieces. Heat a tablespoon of olive oil in a large skillet over medium-high heat. Add stew meat to the skillet and cook until it starts to brown. Transfer beef to a 6-qt slow cooker. Add enchilada sauce, condensed cheese soup, black beans, Rotel diced tomatoes and green chilies, beef broth, oregano, and shredded cheddar cheese. Season with salt and black pepper to taste. Stir to combine. Cover the crockpot and cook on LOW 8 to 10 hours. Garnish soup with cilantro or parsley.

Ingredients:

  • lb beef stew meat
  • 1 Tbsp olive oil
  • 1 (28-oz) can red enchilada sauce
  • 1 (10.5-oz) can Condensed Cheese Soup (can use Fiesta Cheese Soup)
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (11-oz) can whole kernel corn, drained
  • 1 (10-oz) can Rotel diced tomatoes and green chiles, undrained
  • 2 cups beef broth
  • 1 tsp dried oregano
  • 1 cup shredded cheese
