Hands-Free Risotto Recipe

When I got my hair cut in Las Vegas this summer, my hairdresser and I were discussing recipes. He asked me if I had ever tried Slow Cooker Risotto. I had never heard of making risotto in a slow cooker. I was instantly intrigued!

Now, I absolutely love risotto, but I don’t necessarily love making risotto. It isn’t hard, it just takes a lot of standing and stirring. I did some research and came up with this Slow Cooker Risotto. It is SO good. We’ve made this numerous times and it turns out perfectly every time.

How to Make Risotto in the Slow Cooker

This recipe couldn’t be any simpler. Dump chicken broth, rice, onion powder, garlic powder, salt, and pepper in the slow cooker and let it do its thing for about 2 hours. Stir in some cheese and you have risotto.

  • This recipe uses Arborio rice. Arborio rice is a short-grain Italian rice that can be found in the rice section at the grocery store and Walmart.
  • Do not rinse the rice before adding it to the crockpot. You want the extra starch when making risotto. The starch is what makes the rice creamy.
  • What rice can I substitute for Arborio? You can really use any type of medium or short-grain rice to make the dish. Sushi rice works well in a pinch. Avoid is long-grain rice, like basmati or jasmine, as it doesn’t have enough starch content to get creamy.
  • I used parmesan cheese in this risotto. Feel free to use any cheese that you enjoy.
  • This is a great base recipe for risotto. Feel free to add in some green peas, cooked mushrooms, prosciutto, or cooked chopped chicken. The possibilities are endless!
  • Is risotto gluten-free? Yes! All of the ingredients in this recipe ar gluten-free.

  1. Making this now, should I not stir it at all until adding additional ingredients at the end (peas and cooked chicken)? Sounds like it’s going to be amazing

  2. Risotto is my absolute favorite. Toss in some cooked shrimp and sautéed asparagus, add some crusty bread and dipping oil, and dinner is served! I don't make it often because of the constant attention required. Now I can make it more often without aggravation. Thanks so much for sharing Steph!

      1. It can be doubled or tripled. I would check it at the listed time and add more time if the rice isn’t tender.
