Sausage Balls are one of our favorite snacks. I always have a bag in the freezer for a quick snack. I had some frozen hash browns in the freezer and was thinking of ways to use them up. I wondered how they would taste in my favorite sausage ball recipe. Only one way to find out!

I whipped up a batch of sausage balls and mixed the hash browns. I waited patiently for them to bake up. I took one bite and had my answer. They are awesome! These would be great for parties or Christmas morning! Just scramble up some eggs for a super quick Christmas morning breakfast.

Sausage & Hash Brown Balls

Yield: 5 dozen
Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes
Sausage & Hash Brown Balls – mix together and freezer for a quick snack. Always a HUGE HIT! Can freeze for later. Great for breakfast or at parties. There are never any left!

Ingredients:

Instructions:

  • Preheat oven to 400°F.
  • Mix all ingredients until well combined. (I use my KitchenAid mixer with the dough hook attachment)
  • Roll into 1 1/2-inch balls. Place on rimmed baking sheet.
  • Bake for 18 – 22 minutes, or until brown.

Notes:

Sausage balls may be frozen uncooked. If baking frozen, add a few minutes to the baking time.

    1. Yes, I have used freshly shredded potatoes instead of frozen hash browns. They work out great, but just shred at the last minute or they start to turn a little brownish. Sometimes if I need to shred a bit in advance I soak them in lemon water for a few minutes, then put them in a strainer to get the excess liquid off.

      1. I’ve used both freshly shredded potatoes and the refrigerated Simply Potatoes with great success. Usually add slice green onions and a can a chopped green chilies. Never any left.

  4. Just made this after my mom had made these a couple weeks ago. We mad them bigger and got aobut 25 balls out of it. Really good and cooked up just fine. Gave me a reason to finally use my Kitchen Aid stand mixer with dough hook. I was surprised at how cold the mixture got, thanks frozen hashies and I’m glad it turns out so good, the dough is so sticky and gross when working with it. Super delicious though and can’t wait to eat these again for a few days for breakfast. Next time I plan to put some sofrito into the mix to give it an extra hint of seasoning. We also used mild sausage because I just don’t do hot well. Thanks for this.

  6. These are easy & fantastic! I would not change a single thing. They are just as good at room temperature, so if you need to carry these somewhere, there is no worry about keeping them warm. Thank you for sharing another fabulous recipe!

  8. If I do this….Can I do this??????….Don’t you think it would be better with…….I wonder if I could blah blah blah……Plain Chicken….I don’t know how you don’t lose your mind! People, for goodness sake, If you want the recipe….try it! If you want to try it another way….go for it but how is plain chicken supposed to know if it will work this way or that????? Why can’t people just accept the recipe as is….????

  9. Thank you for this recipe. I love the addition of the hash browns. Like another post, I don’t make sausage balls very often because of the effort it takes to mix everything together. Never thought to use my stand mixer! And thank you for noting they can be frozen and then baked frozen. We have a staff breakfast next week but I am going to make them Saturday and bake them before I leave for work on the day of the breakfast. What a time saver!

      1. Bisquick is flour with a leavening agent and shortening already added. You can use it as a base for many baking needs. Bisquick is not a complete pancake mix. It can be used to make pancakes, but it would need additional ingredients.

  10. I have made these several times. They are so easy to make and everyone loves them. I have also experimented with different sausage flavors and they always turn out great. I bake them and then freeze in a ziplock bag. Microwave for about 1 minute. Great breakfast or snack on the go.

  12. Mine came out dry I knew that something didn’t look right when I had to squeeze them into a ball. The nay thing I did different is to use rehydrated hash browns. Any ideas it attested good just looks bad

  13. I made these today for a church breakfast. Using my kitchenaid with the dough hook was awesome! I used to make a similar recipe without the hashbrowns and cream cheese and mixed it by hand. It took so long to get it the right consistency. Thank you for the helpful hint. I used my Pampered chef scoop so it was very quick to get them on the cookie sheet.

  14. I don't have a stand mixer. Do you think a food processor would work? Seems like it might be hard to mix this by hand.

    1. I haven't tried this in the food processor. I don't know if it would pulverize the hash browns or not. Without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.

  15. Nice recipe – thank you. I see no eggs in this mix. Would it help to add an egg or two? The eggs might bind the mix better and fluff it up a little.

  16. If I cook these with precooked turkey sausage (we don't eat pork), would it change anything? Just thinking there will be less grease and will they still hold together? Think cooking time would change? Excited to make these today! Thanks for the recipe!

    1. They wouldn’t be the same at all with precooked meat. There isn’t anything to bind the balls together. You could try uncooked turkey sausage in place of the pork sausage.

  17. Could I put these in a crockpot to keep them warm? I'm trying to find something to take to a Christmas party we are traveling to.

    1. You can put a towel on top of the slower cooker – under the lid and lock the lid. The towel will absorb any moisture

    1. I usually freeze them and then bake them from frozen, but I don't see why it would work the other way around. I think it would be fine to bake and then freeze.

    1. These are absolutely amazing. I got 6 dozen, so I likely made my balls smaller – but they are dang delicious. Taking to Texas A&M tailgate in the morning! I used my stand mixer & it mixed up perfectly. I wouldn’t change a single thing in the recipe. Thanks for sharing!

        1. In the microwave or in the oven/grill covered in foil. You could also try a slow cooker.

      6 cups all-purpose flour
      3 tablespoons baking powder
      1 tablespoon salt
      1 cup vegetable shortening
      Directions:

      Sift flour, baking powder and salt three times into a large bowl.

      Cut in shortening with a pastry blender until mixture resembles fine crumbs.

      Store mixture in airtight container in the refrigerator up to 4 months.

      Use whenever your recipe calls for "Bisquick mix".

    2. CMB8489 – I've never fried sausage balls, so I don't know how that would work or what any cooking time would be.

      1. If I used frozen sausage at the start, I let the sausage thaw out then made the mixture and then into balls. Can I freeze them again?

        1. I would think that you could if you freeze them immediately after rolling into balls.
