This “Souper Rice” is so good! It is like a cheater risotto. This rice is made with chicken soup, instant rice, chicken broth, and parmesan cheese. It only takes about 10 minutes from start to finish. We both loved the flavors. This is a great base recipe to get creative with. You could add some chicken, peas, and mushrooms and this rice would be a full meal.

Feel free to use Cream of Mushroom soup or your favorite Cream of Soup flavor in this dish. You can also switch up the cheeses. Cheddar, asiago, romano – use whatever your family likes. I used grated parmesan cheese from the green jar and it tasted great!

Instructions:

  • Heat the soup and broth in a 2-quart saucepan over medium-high heat to a boil.
  • Stir the rice, cheese, and pepper into the saucepan. Cover the pan and remove from heat.
  • Let stand for 5-8 minutes, until rice is cook and most of the liquid is absorbed.

Notes:

  • This recipe is specifically made for Instant White Rice. Using any other kind of rice will not work with this particular recipe. 
  • You can use any can of condensed cream soup that you enjoy. Cream of chicken, mushroom, celery, or broccoli all works fine.
  • I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.
  • I use parmesan cheese, but you can use any cheese that you prefer.

  4. This was a great quick meal. I did this recipe 3 times already, each with a different type of instant. (White, Jasmine, and Brown) It works well with Instant Brown Rice, you just have to adjust the measurements of the Broth(water) according to measurements on the back of the box. It taste even better with smoked cheese added.

    2. Measurements on White/Brown are identical. Cook time/simmer is different. I have brown minute rice. Follow those instructions?

  7. I made this with long cooking rice it turned out great!! I just cooked my rice with the chicken broth then I added the can of cream of chicken soup and Parmesan cheese. I didn’t have instant rice and didn’t feel like waiting to go to the store to try it. It’s a keeper

  8. I am not a fan of plain white rice but adding these few other ingredients makes it so good! I have made this quite a few times using different cream soup flavors. It’s so easy and such an inexpensive side dish. Everyone in my family loves it too.

  9. I love white rice! This dish comes together very quickly makes great either side dish or a main dish with a few extra ingredients. I would suggest using low sodium soup and broth, the Parmesan adds tons of salt. Can’t wait to try using different flavors of soup.

  10. I’ve been making this recipe for over 40yrs. Was even on t.v. commercials for Campbell’s, back in the 80’s. Glad to see that others are learning what I’ve always known. That this is a great main/side dish that tastes great! Enjoy.

    1. I’m trying it today, it’s still on the stove right now. I don’t know what my problem is with instant rice. I followed the recipe *to the letter* with Minute Rice, etc. Full boil, then added rice/cheese/pepper, stirred, removed from heat. 8 minutes later when I checked it was still rice soup with very al-dente rice. I’ve re-heated it to simmer for another 5 minutes.

      Is this just common with minute rice that the actual cooking time can vary widely? Or am I doing something wrong. I’m not at high altitude, the rice is new.

      1. Did you cover the pot with a lid after you removed it from the heat? That’s the only reason I can think of if you followed all the other directions.

  14. This was super fast and easy. I added frozen peas and left over chicken and made a one-pot meal. I even had enough left over to take to work for lunch the next day. One tip for those of us watching our sodium intake – don’t use the 98% fat free – it has almost twice as much salt as the heart healthy variety.

    1. This has been my favorite rice recipe for a long time. Thank you Plainchicken for rhe recipe. Last night I added a small can of green chiles. It was wonderful! My husband, who loves all things rice, asked to save the leftovers. It paired so well with the chicken he had smoked.

    2. I’ve cooked this type of rice for years. If you use any other rice, just combine the ingredients in a casserole dish, cover and bake on 350 for about an hour, or until the rice is tender.

  19. All I have in the house right now is a bar of real parmesan cheese. Do you think it would be ok to shred it and sub for green can? Want to make it NOW, not wait til next trip to grocery, which is 17 miles away. Tnx

  22. I made this tonight I used grated parmesan reggiano. It cane out perfect so easy and yummy. Ann I dont care for instant rice and had to go out and buy it but it was well worth the $1.50 because this came out great.

    1. Oops! This sounds great but I never have instant rice on hand. Has anyone made it with regular white rice?
