Easy Overnight Breakfast Casserole

We aren’t big breakfast eaters, but we LOVE breakfast for dinner. I only make breakfast when we have overnight guests or a long weekend. This Taco Breakfast Casserole is SO good. Taco meat, eggs, half-and-half, cheese, bread, and Rotel tomatoes. All of our favorite things! The casserole has to sit for at least 8 hours. I like to make it the night before and just let it hang out in the fridge until dinner. This is was SO delicious. I ate way too much of this! I loved how easy it was to make and that I could assemble it early.

How to Make Taco Breakfast Casserole

This casserole is super easy to make. Start with browning some ground beef. Add a packet of taco seasoning and water. Cook until the water has been absorbed. Butter bread slices and cut into cubes. Place the bread in a 9×13-inch dish Top with taco meat and cheese. Whisk together eggs, half-and-half, and salt. Stir in Rotel tomatoes and pour over meat and cheese. Cover and refrigerate for at least 8 hours. Remove the dish from the refrigerator. Uncover and bake.

  • I used lean ground beef, but ground turkey would also be great in this casserole.
  • I used Sunbeam bread for the bread cubes in this dish.

  • Feel free to add in some black beans or onions to the taco meat.
  • This is a great recipe to use up any leftover taco meat! I like to make a whole batch of our Best Taco Meat recipe and use half for dinner and half for this casserole.
  • Is Taco Breakfast Casserole spicy? There is a small kick from the Rotel diced tomatoes and green chiles. If you are worried about the heat, make sure to use a can of MILD tomatoes.
  • Can Taco Breakfast Casserole be frozen? Yes! Assemble the casserole and cover the dish with plastic wrap and aluminum foil. When ready to bake, thaw overnight in the refrigerator and bake as directed.
  • Do I have to let the casserole sit overnight? No. If you are short on time, you can assemble and bake the casserole right away.

What to Serve with Mexican Breakfast Casserole

This casserole is perfect for breakfast, lunch, or dinner. This would also be great for a potluck or an early morning tailgate too! (I’m always thinking of tailgating!) Feel free to top the casserole with your favorite taco toppings. Sour cream, lettuce, salsa, olives, guacamole – anything goes! We usually serve this with some potatoes or grits.   • In a large skillet, cook ground beef until no longer pink. Drain fat and return to skillet, add taco seasoning and water. Simmer for 5 minutes, until most of the liquid is absorbed. Set aside.
  • Butter both sides of each slice of bread and cut into cubes. Place in a 9×13-inch dish Top with taco meat and cheese.
  • Whisk together eggs, half-and-half and salt. Stir in Rotel tomatoes and pour over meat and cheese. Cover and refrigerate at least 8 hours.
  • Preheat oven to 350ºF. Bake casserole uncovered for 40 to 50 minutes.

  1. If doubling, what do you suggest for baking time?
    Also thinking of cubing bread and drizzling melted butter over that. The other way is pretty messy.
    I received raves over this casserole so I’m making again for Mother’s Day Brunch this year. Served with homemade Greek yogurt, jalapeño, cilantro and salsa on the side. SO GOOD!!!

  2. Would it be okay if it didn’t sit in the fridge for 8 hours? Or what happens if you assemble and cook it right away?

    1. It really depends on how hearty everyone’s appetite is. If you are having other stuff with it, one batch is probably enough. If you have big eaters, you will need to double it.

  3. Do you think it would work without the Rotel? I am thinking about making this for my nephews when they sleep over but neither likes tomatoes.
