I love easy side dishes. I usually spend so much time on the main dish, that I don’t want to fool too much with the sides. While I am guilty of pulling out a box of rice or pasta, I am trying to get better and make more sides from scratch! This easy recipe for Parmesan Mushroom Rice is just as easy as the boxed stuff but tastes SO much better!

This Parmesan Mushroom Rice was ready in about 20 minutes and only required about 5 minutes of hands-on time to make. First, sauté the mushrooms in some butter. Add garlic and cook it just until it is fragrant. Finally, add the rice, chicken broth, and milk. Give the mixture a stir and let it simmer. Once the rice is cooked stir in the parmesan cheese and parsley. So easy and SOOO delicious!

If you aren’t fans of mushrooms, you can definitely leave them out. This rice will taste great either way. You could even throw in some leftover chicken pork, or steak and make this a one-pan meal!

Ingredients:

  • 4 Tbsp butter
  • 8- oz sliced white mushrooms, cleaned
  • 2 cloves garlic, minced
  • 1 cup long grain rice, uncooked
  • 1 cup chicken broth
  • 1 cup milk
  • ¼ tsp salt
  • cup grated parmesan, canned or fresh grated
  • 2 tsp dried parsley
  • pepper to taste

Instructions:

  • In a large skillet over medium-high heat, melt butter. Add mushrooms and cook until soft, about 5 minutes.
  • Add garlic and rice; cook for 2 minutes. Add chicken broth, milk and salt.
  • Cover and simmer for 20 minutes, until liquid is absorbed and rice is tender.
  • Remove from heat. Stir in parmesan cheese, parsley and pepper.
  • You may need to add more milk if rice isn’t creamy enough.

Notes:

Can substitute vegetable broth for a vegetarian dish.

  1. This was the creamiest, most delish rice dish of its kind I have come across to date! My husband remarked on how tasty the mushrooms were! (I used overripe ones he brought home from the store which I was about to throw out – I should have known better than to let him choose – sigh!) But this recipe is so good it didn’t matter, it was still yummy! The only change I made was to add fresh lemon juice in Step 4 with the Parmesan, etc, per comment above, although the original amount of salt was fine with us. MAKE THIS NOW PEOPLE!

  2. Thx for a great recipe.
    I made this with basmati brown rice. Added an additional half cup of broth and simmered for approximately 40 minutes. Delicious. A perfect meal on its own.
    As owners of a 11 week old puppy this gave me more flexibility with my time compared to making mushroom risotto and is a close cousin in texture and taste.
    Definitely will recommend to family and friends.

  3. I am a huge fan of this recipe, with only a few amendments: it needs more salt, and at the end of the recipe, add lemon juice. It highlights the other flavors, and it's fantastic. Also, I recommend using basmati rice, which makes most rice-related things better. I love that it can all be made in one pot, and is good enough to be the main dish in my opinion. Particularly so if good, thick mushroom pieces are used. The better the mushroom, the better the dish, though it's still good with canned mushrooms, and that says something. In fact, I have a pot of it on my stove at this moment.

  4. I made this without the butter, cooked portabella's ( more flavor) in olive oil, at the end I added grilled chicken cut up in bite size pieces..We found it a bit bland.so I added some sauteed red onion & roasted red peppers..yum!!
