Easy casseroles are our go-to during the week and this Frito Pie Casserole is a family favorite! Layers of Fritos, taco meat, beans, and gooey cheese. How could this not be good? If you’re familiar with the concept of walking tacos, Frito pie casserole is essentially the same idea, with one distinction: walking tacos are designed to be enjoyed straight from the Fritos bag, while Frito pie casserole is plated for a more sit-down meal experience. This is a great recipe for a quick weeknight dinner. It is super simple to make and tastes great! Add this to your menu the next time you need a meal the whole family will enjoy!

How to Make Frito Chili Pie

This recipe is very easy to make with only a few basic ingredients. In a large skillet, brown ground beef over medium-high heat until no longer pink. Drain excess grease. Stir in dried minced onion flakes, beans, and enchilada sauce and simmer for 5 minutes. Spray a casserole dish with nonstick cooking spray. Place half a bag of Frito corn chips in the bottom of the baking dish. Spread the beef mixture over the crunchy corn chips. Sprinkle shredded cheese over the meat. Top with remaining chips. Bake uncovered until bubbly. Garnish with chopped green onions.

  • Can substitute ground turkey or ground chicken for a lower-calorie option.
  • I used Ranch Style Beans in this chili. They are near the chili beans. If you can’t find them, you can substitute chili beans, kidney beans, or pinto beans. Black beans are also delicious.
  • For extra flavor, add a packet of taco seasoning or chili seasonings to the beef mixture.
  • Is Frito Pie spicy? No. If you want a spicier dish, add a can of green chilies or Rotel diced tomatoes and green chilies.
  • You can use any shredded cheese that you enjoy. Sharp cheddar cheese, Monterey jack, a Mexican cheese blend, or pepper jack all work great!
  • Feel free to add your favorite veggies to the dish such as diced onion and bell peppers.
  • Can Frito Pie be made in advance? Yes. I suggest making the ground beef mixture ahead of time and storing it in the fridge until you are ready to assemble and bake the casserole. If you assemble the casserole ahead of time, the Frito chips will get soggy.
  • Can I freeze Frito Pie? Yes. Transfer the casserole to a freezer safe container. Store in the freezer for up to 4 months.
    • Keep in mind that the chips will no longer be crunchy.
    • I prefer to freeze the chili meat mixture and assemble the casserole when we are ready to eat the dish.
    • Thaw in the fridge overnight and reheat in the microwave.
  • Store leftovers in an airtight container in the refrigerator.

What to Serve with Frito Pie

Top the casserole with your favorite toppings – lettuce, sour cream, black olives, avocado, and hot sauce. We serve this with Mexican Street Corn Dip and a green salad. This is equally delicious with some Quick Mexican Rice. Don’t forget the salsa and guacamole. This is the perfect dish for busy weeknights or a potluck. Ingredients:

  • 1 lb ground beef
  • 2 Tbsp dried minced onion flakes
  • 2 (15-oz) cans Ranch Style Beans
  • 2 (10-oz) cans enchilada sauce
  • 1 (9.75-oz) bag Fritos
  • 2 cups shredded cheddar cheese
  • chopped green onions

Instructions:

  • Preheat oven to 350ºF. Spray a 9×13-inch pan with cooking spray. Set aside.
  • In a large skillet, cook ground beef until no longer pink. Drain fat. Return meat to pan. Stir in onion flakes, beans and enchilada sauce.
  • Pour half of Fritos into prepared pan. Top with meat mixture. Sprinkle cheese over meat mixture. Top with remaining chips.
  • Bake for 25 to 30 minutes. Sprinkle with chopped green onions.

    1. The brand is Ranch Style Beans and they have a mild chili (southwest) flavor to them. Can is black with white lettering and yellow & gold artwork. Hope that helps!
