Best Pecan Cobbler with Toffee Bits

Stop what you are doing and make this Pecan Cobbler. A luscious, buttery concoction with a texture that’s part cake, part pie, and part cobbler—a dessert that defies convention. As you take your first bite, the symphony of flavors unfolds. The golden crust, soaked in velvety butter and sugar, gives way to a tender, vanilla-kissed interior that’s punctuated by the satisfying crunch of chopped pecans and the sweet allure of toffee bits.

But the pièce de résistance is the bubbling, caramelized magic that happens when boiling water is poured over the top, creating a heavenly mixture of textures and tastes. This is hands down one of the best desserts I’ve ever made. I had zero self-control around this cobbler. It is ridiculously easy to make and even easier to eat. It is, in a word, AMAZING!! You MUST make this for the holidays. It is sure to be a hit.

How to Make Pecan Pie Cobbler

As I said, this dessert is very easy to make. In a small bowl, melt unsalted butter. Pour the melted butter into an 8×8-inch baking pan that has been sprayed with nonstick cooking spray. In a large bowl, mix sugar, all-purpose flour, baking powder, salt, milk, and vanilla extract together with a wire whisk. Pour the batter over melted butter. In another bowl, combine sugar, chopped pecans, and toffee bits; sprinkle evenly over the batter. Slowly pour boiling hot water over the top of the cobbler. Do not stir! Bake in a preheated oven until golden brown and set. Remove from the oven and cool slightly before serving.
