Quick Pasta with Smoked Sausage

I am in love with this easy pasta dish! Smoked sausage and pasta tossed in an easy homemade beer cheese sauce – what’s not to love?!?! PLUS it only takes about 15 minutes from start to finish. Basically as long as it takes to boil the pasta. Perfect for a hectic weeknight.

How to Make Beer Cheese & Sausage Pasta

As I said, this takes about 15 minutes to make. I started the pasta. While the pasta is cooking, brown the sausage. Remove the sausage from the skillet. Heat beer until it bubbles. Stir in flour and cheese. Whisk until cheese has melted and is smooth. Whisk in Worcestershire, dry mustard, paprika, salt and pepper. Remove from heat. Stir in the cooked pasta and sausage. Serve immediately.

  • This is best served immediately. If it sits for a while and gets too thick, just add some milk and it will be as good as new.
  • I used smoked turkey sausage in this recipe. I think it tastes great, and it saves some calories. Feel free to use regular smoked sausage. This is great with some Conecuh Smoked Sausage!
  • Use any beer that you enjoy. I usually use Michelob Ultra because it has a light taste and I’m not a big fan of beer.
  • I used campanelle pasta. If you can’t find campanelle, use whatever shape of pasta you like. Elbows, bowtie pasta, or penne all work great!

  • Cook pasta according to package directions. Drain and set aside.
  • In a large skillet, cook smoked sausage in olive oil until browned, about 5 minutes. Remove from heat.
  • In a medium saucepan, heat beer over medium-high heat until it bubbles. Stir in flour and cheese. Whisk until cheese has melted and is smooth. Whisk in Worcestershire, dry mustard, paprika, salt and pepper. Remove from heat.
  • Toss cooked sausage and pasta in beer cheese sauce. Serve immediately.
  • (To thicken the sauce, add a flour a little bit at a time. For a thinner sauce, add small amounts of beer until it reaches the desired consistency.)
