This recipe is from Plain Chicken reader, William. William emailed me this summer and pointed out that I was missing a very obvious “crack” recipe – Cracked Out Jalapeño Poppers. OMG! He was totally right. I immediately tried the recipe and we absolutely LOVED it! I took these to a tailgate and they were gone in a flash! You can assemble these ahead of time and refrigerate them until you are ready.

I baked these Cracked Out Jalapeño Poppers on a baking sheet topped with a baking rack. Cooking the bacon wrapped poppers on the rack helps get the bacon nice and crispy. These Cracked Out Jalapeño Poppers taste great warm or at room temperature. They are perfect for watching all the NFL playoff games and the upcoming College National Championship game!

Cracked Out Jalapeño Poppers

prep time: 5 MINScook time: 20 MINStotal time: 25 mins

ingredients:

  • 1 (8-oz) package cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 Tbsp mayonnaise
  • 1 (1-oz) package Ranch dressing mix
  • 20 large jalapeño peppers (maybe more or less, depending on exact pepper size)
  • 2 lbs bacon slices

instructions:

  1. Preheat oven to 400ºF. Line a large baking sheet with foil and top with baking rack.
  2. Mix together cream cheese, cheddar, mayonnaise, and ranch mix until well combined.  Set aside.
  3. Slice each jalapeño in half the long way, and remove the seeds and membranes.
  4. Spoon the cream cheese mixture into each jalapeno half. Wrap each stuffed jalapeño with a slice of bacon.  Secure bacon with a toothpick if needed.
  5. Place jalapenos onto baking rack.
  6. Bake for 20 to 30 minutes, until bacon is crispy.

    1. It's a reference to her "crack" dip, so good it's extremely addicting. Basically a combo of bacon, ranch, and cheddar. It works as a dip, a filling for poppers, a vegetable/cracker spread, mixed into a casserole, just about anything you want. You just need to modify the ingredients a bit to get the proper thickness you need for whatever you are using it for. =)
