Fat Tuesday is right around the corner, so we are in full Mardi Gras mode at our house. We made this Cajun Dirty Rice last weekend and it was SO good!!! This isn’t traditional dirty rice – there are no chicken livers in this rice! I’m not a chicken liver kind of gal!! This rice has a mixture of pork sausage and ground beef. This is very easy to make and is ready in about 30 minutes!

This is super easy to make. Start with browning some ground beef, pork sausage, onion, bell pepper, and celery. Add rice, chicken broth, cajun seasoning, and Rotel diced tomatoes. Simmer until the rice is cooked and serve. If you are sensitive to heat, make sure to use a can of mild Rotel diced tomatoes.

This makes a TON, so it is perfect for a Mardi Gras Party. You could also easily cut the recipe in half. We ate this for dinner and had leftovers for lunch. It was great both times! Cajun Dirty Rice – delicious one-pot meal!! Ready in under 30 minutes! Great for Mardi Gras parties!!! Ground beef, pork sausage, onion, bell pepper, celery, cajun seasoning, rice, chicken broth and diced tomatoes and green chiles. This was a huge hit in our house!

Ingredients:

  • 1 lb ground beef
  • 1 lb pork sausage
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 2 Tbsp Cajun/Creole Seasoning
  • 2 cups uncooked regular long-grain rice
  • 4 cups chicken broth
  • 1 (10-oz) can diced tomatoes with green chiles, undrained

Instructions:

  • In a large skillet, cook ground beef, sausage, onion, green pepper, and celery. Cook until meat is no longer pink and vegetables are soft. Drain fat.
  • Add Cajun/Creole Seasoning rice, chicken broth, and diced tomatoes and green chiles to skillet. Bring to a boil.
  • Reduce heat and simmer for 20 to 25 minutes, until rice is tender.

Notes:

Can substitute ground turkey for ground beef.
I used Jimmy Dean sausage.
If you are sensitive to heat use mild Rotel diced tomatoes and green chiles.

  1. Love this recipe. I’ve used in a variation of ways. When I first made it I used chicken quarter legs and sausage. I pan fried the chicken with olive oil and lightly seasoned with the Cajun seasoning. I then removed the chicken from the pan and used the chicken grease to sautéed the onions, green peppers, and celery. Then I followed the recipe to the letter. It was a variation of an aroze con pollo, Cajun style. It was fantastic. Really great dish. Since then I’ve followed exactly to the letter, excellent. I’ve added beyond meat sausage and meat, excellent. Just excellent. Thanks.

  2. I made this tonight and it was delicious!! Since we are under SIP, I didn’t have any ground pork, so I cut the recipe in half and used a one pound package of ground sirloin. I had a 14.5 ounce can of diced tomatoes and a 4 ounce can of mild green chilies, brown rice, beef stock, celery, onion and Cajun seasoning. It was delicious even without the bell pepper and the pork! Thank you for a great dinner.

    IT WAS DELICIOUS!!! The only thing I did different was add 3 cloves of crushed garlic….

  4. I used hot italian sausage, ground beef, about 12 oz of leftover kielbasa and threw in a can of red beans. Left everything else the same. It was amazing. Smelled SO good cooking also.
