This Artichoke Chicken has quickly become a favorite in our house. Chicken topped with parmesan cheese and artichokes. It is incredibly delicious! This chicken only takes a few minutes to make and it tastes fantastic. Pan sear the chicken a couple of minutes on each side and place on a rimmed baking sheet. Mix together parmesan cheese, mayonnaise, artichokes, and garlic. Spread the artichoke mixture on top of the chicken and bake.

We’ve made this several times and even served it at a little dinner party. I love making this for a dinner party because you can assemble the chicken earlier in the day and pop it in the oven about 20 minutes before you are ready to eat. SO easy!!

To give the chicken extra flavor, I marinated it in some bottled Italian dressing. I really think this made the dish. Nobody wants to eat bland chicken! The cheesy artichoke mixture on top is basically my favorite artichoke dip. OMG! I mean, how could anyone NOT like this?!?! You could even add some mushrooms to the artichoke mixture. Double YUM!

Instructions:

  • Marinate chicken breasts in Italian dressing a few hours to overnight.
  • Preheat oven to 375ºF.
  • Heat olive oil in non-stick skillet over medium-high heat. Remove chicken from marinade and cook 2 minutes per side. Place chicken on foil lined baking sheet.
  • In a medium bowl, mix together chopped artichoke hearts, Parmesan cheese, mayonnaise, and garlic powder. Spread artichoke mixture evenly on top of chicken.
  • Bake for 20 to 25 minutes, until juices run clear.

  2. Made this tonight just as the directions you posted as well as ingredients (used thighs). Next time will grill longer than 2 minutes on each side to get more browned. Did need to bake 40 minutes. Very, very tasty. Had it with Cali rice, mushroom and asparagus medley. Will make again.

  3. I commented four days ago and didn’t make this until today. I altered your recipe a little by adding about 1T dried, minced onion and 2 big handfuls of chopped, fresh spinach to the cheese mixture. I then used my crockpot on low for 8hrs.

    First bite just this second. Completely, 100% DELICIOUS! OMG, seriously over-the-top fabulous!! Side of steamed zucchini seasoned with balsamic vinegar, minced garlic, salt & pepper.

    Didn’t do the keto bread I said I would this time but it will be tried soon.

  5. Does mayo mean Hellman’s or do you mean miracle whip? A lot of people call Miracle Whip mayonnaise. Do you think Miracle Whip would work?

    1. I used Duke’s mayonnaise. You can certainly try it with Miracle Whip. I haven’t made this with miracle whip, so I can say with 100% certainty how it will work.

I doubled the recipe for this last weekend, so I would have enough to enjoy all week, and I'm _loving_ it. I've enjoyed quite a few of your recipes since coming across this site, but I think this may be my favorite yet! I like making some brown rice to go with it.
