Brown Sugar Pineapple Chicken – only 4 ingredients! SO good!!! We actually made it twice in one week. Pineapple juice, brown sugar, BBQ sauce and chicken. Such an easy weeknight meal.
It appears that I am on a pineapple juice kick this month. I’ve made several recipes with it and I just can’t stop! LOL!. This Pineapple BBQ Brown Sugar Chicken is one of the best so far. I am addicted to it! We made this chicken twice last week. I just can’t get enough of it! The best part about the recipe is that there are only 4 ingredients – that includes the chicken! OMG! YES!
This Pineapple BBQ Brown Sugar Chicken is so simple and tastes great! The chicken only needs to marinate for a few hours in the pineapple juice mixture otherwise it will turn to mush. I usually marinate my chicken overnight, but I don’t with this recipe. You only need a few hours tops.
We reserved a little of the marinade so we could brush it on the chicken right before we took it off the grill. YUM! It really bumped up the flavor. As I said, we loved this chicken. We always make the full recipe and eat the leftovers in a wrap or on top of a salad. The chicken is just as good, if not better, the next day! Give it a try this weekend. I promise you won’t be disappointed.
Brown Sugar Pineapple Chicken
INGREDIENTS:
- 1 cup pineapple juice
- 6 Tbsp brown sugar
- 6 Tbsp BBQ sauce
- 1-½ to 2 lb boneless chicken tenders
INSTRUCTIONS:
- Whisk together pineapple juice, brown sugar and BBQ sauce. Reserve ¼ cup of marinade.
- Place chicken in a gallon ziplock bag. Pour remaining marinade over chicken. Seal bag and refrigerate 2 to 4 hours.
- Remove chicken from marinade. Grill until done, 8 to 10 minutes. Brush chicken on both sides with reserved marinade before removing from grill.
