This Beef Tamale Casserole is super simple to make. It starts with a box of Jiffy Cornbread Mix. I love the hint of sweetness in the Jiffy Cornbread Mix! You are going to mix up the cornbread base and pop it in the oven. While the cornbread bakes, make the beef enchilada mixture with ground beef, taco seasoning, and enchilada sauce. Take the cornbread out of the oven, top with the beef enchilada mixture and cheese. Put the casserole back in the oven and finish baking.

The casserole takes less than an hour from start to table. We served this with some black beans and Mexican rice for a quick and delicious weeknight meal. We had the leftovers for lunch and it was just as good! I love when I can get two meals out of one night of cooking! Give this a try ASAP! I promise that you won’t be disappointed.

Ingredients:

Instructions:

  • Preheat oven to 400ºF. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Set aside.
  • In a large bowl, combine muffin mix, corn, eggs, milk, and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
  • In a large skillet over medium heat, cook ground beef until no longer pink. Drain fat. Add taco seasoning packet and salsa. Cook for an additional 5 minutes.
  • Toss beef in enchilada sauce. Pour beef mixture over cornbread and top with remaining cup of cheese. Bake for and 20 additional minutes.
  • Allow to cool for 5 minutes and cut into 6 or 8 squares. Top with favorite taco toppings, if desired.

Notes:

Can substitute ground turkey for ground beef.
I used a box of Jiffy Mix cornbread mix.

Our favorite store-bought salsas are Mateo’s, Kylito’s, Pace Picante Sauce, and Pace Restaurant Style Salsa.

  5. Update: I made this last night and it was absolutely delicious!! Hubby loved it! I did add a small bag of frozen southwest style corn to the beef mixture (rinsed in colander first to thaw), as well as a small can of drained mild green chilies. Also, I forgot to buy the creamed corn and didn’t want to go back to the store so I googled substitutions, and I used a regular can of corn, drained, add half cup of milk and a tablespoon of cornstarch, then I used my immersion blender in it. It worked perfectly. The whole dish overall was so good! Definitely “make again” worthy!

    i used bob’s red mill gf cornbread mix, regular can of corn w only half the liquid. and 3/4c of milk. topped with sour cream instead of salsa.

    1. Excellent!! Made this yesterday for supper, loved it!! Making it again today for others that like it hot, so I added jalapenos to the cornbread and green chilis to the meat mixture. I know their going to love it!!

How can I make this in two different size (what size pans). Can it be made and frozen (if made in two different pans). Truly wanna make this but need to downsize the recipe, or at least know how to make and freeze one (if possible).

    1. I've never tried this without the creamed corn. You can certainly give it a try. You will probably need to substitute something for the creamed corn as it does add liquid to the cornbread mixture.

    1. Masee – What a great idea! I have never made this in the crockpot. Unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.

  14. I have a question about this recipe….Is the cornbread supposed to be cooked ALL the way? Am currently making it now (I think i may have used a slightly smaller dish!) and after 20 minutes its still a big jiggly in the middle! Just want to know for next time! Thanks!

    1. It will take longer in a smaller dish to cook. The cornbread should be fully cooked after the whole baking time. It won't be fully baked before you add the beef and cheese.

  16. I have made this several times (it was your chicken version but I would use ground beef) and it's a family favorite! I do use the bigger can of enchilada sauce because we like it wetter. And I use close to 2lbs of beef (or ground turkey). So good!
