I love the flavor combination of sausage and cream cheese. I am always looking for new ways to incorporate it into my favorite dishes. I tried it in this hashbrown breakfast casserole and the results were AMAZING! OMG! SO good!!!! You can make this casserole ahead of time and refrigerate or freeze for later. You can even split it between to pans and cook one now and save one for later.

This casserole has all of my favorite breakfast foods. Frozen hashbrowns, sausage, cream cheese, eggs and cheddar cheese. I browed the hashbrowns in a large skillet prior to putting them in the casserole. I think it helped get the potatoes fully cooked and crispy.

I used a roll of Jimmy Dean HOT breakfast sausage in this casserole. If you don’t want the casserole to have a little kick, use all regular breakfast sausage instead. I also used regular cream cheese. I think using low-fat cream cheese would be fine, but I would stay away from the fat-free cream cheese in this dish.

Sausage & Cream Cheese Hash Brown Breakfast Casserole – All of my favorite breakfast foods in one easy casserole! Ingredients:

Instructions:

  • Preheat oven to 350 degrees.
  • In a large skillet, cook sausage until no longer pink. Drain fat.
  • Stir together cooked sausage and cream cheese. Set aside.
  • Add hash browns to skillet and cook until lightly brown. Place hash browns in bottom of lightly greased 9×13-inch pan. Top with sausage/cream cheese mixture and shredded cheddar cheese.
  • Whisk together eggs, salt, pepper, garlic powder, onion powder and milk. Pour over hash brown mixture.
  • **Cover and refrigerate at this point if baking later.**
  • Bake, uncovered, for 40 to 50 minutes.

Notes:

Can assemble casserole ahead of time and refrigerate overnight or freeze for later.
To bake after freezing, thaw completely and bake as directed above.
Can split casserole between two pans and bake one now and freeze one for later.
Can substitute turkey sausage for pork sausage/
I used Jimmy Dean hot sausage.

    1. You can definitely substitute boursin cheese. You could use half boursin and half cream cheese if you are worried about the bourisn overshadowing the ingredients.

  4. The instructions say to cook the hash browns til lightly brown… what would happen if you didn’t cook them at all and just put them in the pan frozen? Has anyone tried that way?

    1. I didn’t cook the hash browns, I just defrosted them and threw them in the bottom of the casserole dish. I was in a rush and missed that step. It was absolutely delicious!

  5. I make a variation of this recipe—one pound Jimmy Dean sage, on top of the hash browns I mix melted butter and softened cream cheese, sausage on top of that, then eggs and top it with lots of cheddar! I don’t use milk. Been making it for decades, and it’s always a hit!

I only did half with sausage and cream cheese and the other half with colored bell peppers and cream cheese for the people who didn't eat sausage.     1. I really don’t know what to sub for hash browns in a hash brown casserole. I’m not sure this exact recipe could be made low carb. It would have to be totally reworked.

      1. We substitute rutabaga for potatoes. The texture is the same and in our low carb eating plan we’ll make rutabaga fries in the air fryer. I’m looking at this recipe and plan on using a spicy chicken sausage and shredded rutabaga as my substitutes.

      2. This recipe can definitely be done as a low carb version. I did one per recipe for my family and did another small batch low carb for me…sub riced cauliflower for the hash browns and coconut milk for the milk. It was delicious!!

  9. The recipe calls for two pounds of sausage but in the comments you wrote you used one sleeve of Tennessee pride (which one be one pound). Can you clarify how much sausage you used?!

    1. I suggest thawing it overnight in the fridge. If it is still at light frozen, you will need to add some time. I’d start with 10-15 minutes.

  14. I've brought this to work several times and it always gets rave reviews. But it always has to cook at least an hour for me, usually longer. At 40 minutes it's still super runny.
