I love to make a batch on Sunday and portion the beans out for the week. We eat these green beans for lunch and dinner throughout the week.
These green beans are super easy to make. The hardest part about making this recipe is slicing the onion! Place fresh green beans, sliced red onion, lemon, tomatoes, garlic, chicken broth, salt and pepper in the slow cooker, cover, and walk away. The slow cooker does all the work. Feel free to toss in some ham or bacon for extra flavor.
As I said, this makes a lot of green beans. These are great for any upcoming cookouts, potlucks, or tailgate parties. The green beans taste great hot or at room temperature. Slow Southern Cooker Green Beans
Equipment:
Ingredients:
- 2 lbs fresh green beans, trimmed
- 1 red onion, chopped
- 1 (14.5-oz) can diced tomatoes, undrained
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 cup chicken broth
- salt and pepper to taste
Instructions:
- Combine all ingredients in the slow cooker.
- Cover and cook on LOW for 4 to 6 hours.
- Serve hot or at room temperature.

I served this at our Christmas dinner. I love how easy this is, but not just that, it's also so delicious! I'm a firm believer in keeping things simple. Even for special dinners, you can still keep things simple, and yet elegant and delicious. This recipe proves it! It is a winner and a keeper!
Can you use frozen green beans and if so should you defrost them in the refrigerator overnight first???
Frozen should be fine. You can thaw them first or just toss them in frozen. I don’t think they would take long to thaw in the slow cooker
this looks so good. I'm gathering recipes for a large family reunion and want recipes that can be made and frozen. Would this one freeze well?? Do you have any other recipes that you particularly like that are good for freezing?
