Mexican Quiche Recipe

We LOVE quiche in our house. Chicken Legs is always requesting quiche for lunch or dinner. I was in the mood for tacos the other night and decided to make a Taco Quiche. OMG! SO good! Taco meat, cheese, and salsa are mixed into the quiche mixture. We topped with quiche slices with some sour cream, salsa, and green onions. We went to chow-town on this quiche! YUM!

How to Make Taco Quiche

This quiche is super easy to make with only a few simple ingredients. In a large skillet, cook ground beef over medium heat until no longer pink. Drain excess grease. Add taco seasoning and salsa to the skillet. Cook until the liquid has been absorbed. Spoon taco meat into the bottom of a frozen pie crust. Sprinkle with shredded cheese. In a bowl, stir together eggs, milk, and sour cream. Season with salt and pepper, if desired. Pour the egg mixture over the meat mixture. Bake in a preheated oven until golden brown and the center is set. Allow the quiche to cool for 5 to 10 minutes before using a knife to cut into slices.

  • How long will Homemade Quiche last? The quiche will keep 3 to 4 days covered in the refrigerator.
    • Store leftovers in airtight plastic containers or Ziplocs in the refrigerator.

What to Serve with Taco Pie

This quiche is always a huge hit in our house. We ate it for lunch and the leftovers for dinner the same day. The quiche only takes a few minutes to make and it was a fun twist to taco night!!

Top the quiche with your favorite taco toppings. We like sour cream, cheese, lettuce, black olives, and tomatoes. We usually serve this with some black beans and rice. It is equally delicious with our favorite Mexican Chopped Salad. Give this a try for Taco Tuesday. It is sure to be a hit!

  • Preheat oven to 350ºF.
  • In a skillet, cook ground beef until no longer pink. Drain fat. Add taco seasoning and salsa. Cook for an additional 2 to 3 minutes, until most of the liquid is absorbed.
  • Spoon ground beef mixture into bottom of pie crust. Top with shredded cheddar cheese.
  • Whisk together eggs, milk and sour cream. Pour over taco mixture in pie crust.

I topped mine with a little salsa. There were only a couple pieces leftover, so I can assure it this reheats very well. This recipe is amazing!

  5. Is the baking time different if you bake from frozen? And I assume no thawing first? It sounds wonderful!

    1. I thaw it overnight in the refrigerator before baking. If you bake it frozen it will take longer. You might also want to cover it for some of the baking time so it doesn't over brown.
