This Catalina Chicken is a super easy weeknight meal! Only 4 ingredients, including the chicken. No prep work. Just put the chicken in the pan, pour the sauce on top and bake. Easy peasy!!! I LOVE easy recipes like this one.

This Catalina Chicken is adapted from a recipe that my Mom has been telling me to make for years. Her recipe uses Thousand Island dressing. I’ve been hesitant to make the recipe because I very much dislike Thousand Island dressing. I decided to switch out the thousand island dressing with some Catalina dressing. Success!! If you don’t like Catalina dressing, you could try French dressing.

This recipe is easy to double if you have a crowd. There are only two of us, so we ate this for dinner and lunch again the next day. It was great reheated for lunch! We served the chicken over some Homemade Chicken Rice-A-Roni. Perfect! If you don’t like rice, this would also be great over some mashed potatoes or noodles.

Catalina Chicken

INGREDIENTS:

  • 4 boneless, skinless chicken breasts
  • 1 cup Catalina salad dressing
  • 1 cup peach or apricot preserves
  • 1 package Onion Soup Mix

INSTRUCTIONS:

  1. Preheat oven to 400ºF. Lightly spray a 11×7-inch pan with cooking spray. Set aside.
  2. Place chicken breasts in prepared pan.
  3. Whisk together dressing, preserves and dry soup mix. Pour over chicken.
  4. Bake uncovered for 40 to 50 minutes, until chicken is cooked through.

  1. I made it as written and loved it. Going on the regular rotation. I had b/s chicken thighs and they came out so moist and tender. They literally fell apart! Might throw in some red pepper flakes next time for a little heat with the sweet! Served with UB Long Grain and Wild rice which paired nicely with the extra sauce in the dish. Thank you for post this recipe. It is a keeper.

  3. I love this recipe — it is also wonderful if you substitute a can of whole berry cranberry sauce for the preserves . .. and you can even sprinkle a few extra berries on top.

  4. This recipe is OLD! My grandmother used to make this when I was a kid 30+ years ago. I think the original recipe came from Southern Living, and used Russian dressing. 🙂

    Several years ago, I started adding a little sriracha and some onion, bell peppers, & pineapple, because it always tasted like sweet and sour chicken to me.

  5. Many years ago we used to eat frequently at a restaurant called Bonanza that had something called Chicken Monterey and they said it was chicken breast marinated in Catalina Dressing and then grilled. It was awesome. I bet this tastes similar!

    1. Omg! I totally forgot about Bonanza!! My family ate there after church on Sundays and Monterey chicken was my fav!! I'm putting this on our grocery list!!

  6. I make this in my crock pot, but substitute a can of whole berry cranberry sauce for the preserves. Very yummy! I sometimes use Russian dressing (red, not pink) in place of the Catalina dressing. Also very yummy!
