Easy Weeknight Casserole

This Beef Lombardi Casserole isn’t fancy; it is just really good! Ground beef, tomatoes, noodles, and three types of cheese. How could it be bad?!?!?! We loved the creamy noodles and the hearty meat sauce. Give this a try. I know you will LOVE it!! It is great to make ahead and can even be frozen for up to a month. Woohoo! High five for easy weeknight meals.

How to Make Beef Lombardi Casserole

This Beef Lombardi Casserole is very simple to make. Just brown the meat, boil the noodles and toss everything together. To make the meat sauce, brown the ground beef. Add diced tomatoes, Rotel, salt, pepper, onion, garlic, and tomato paste. Toss the cooked noodles in sour cream and spread in the bottom of a baking dish. Top with the meat sauce and cheese. Pop it in the oven and bake.

  • Can substitute ground turkey or sausage for ground beef.
  • Is this casserole spicy? There is a little kick to the sauce from the diced tomatoes and green chiles. If you are worried about the heat, just make sure to use a can of MILD diced tomatoes and green chiles.
  • Can I make this casserole ahead of time? Yes! You can assemble the casserole in advance and refrigerate until ready to bake. You may need to add a few minutes to the cooking time if baking straight from the refrigerator.
  • Can I freeze Beef Lombardi Casserole? Yes! You can assemble the casserole in advance and free this for a quick meal later. To bake after freezing, thaw completely and bake as directed below.
  • You can half the recipe or split the casserole into two pans. Bake one and freeze one for later. The cooking time would stay the same.
  • What can I substitute for sour cream? You can use plain Greek yogurt instead of sour cream in this casserole.
  • I used cheddar, parmesan, and mozzarella cheese in this dish. Feel free to substitute an equivalent amount of any cheese you prefer.

Ingredients:

Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
  • Brown ground beef in a large skillet over medium heat. Cook until no longer pink. Drain.
  • Stir in diced tomatoes with juice, diced tomatoes and green chiles with juice, salt, pepper, onion powder, garlic powder and tomato paste.
  • Reduce heat and simmer for 20 minutes.
  • Cook egg noodles according to package directions. Drain.
  • Stir together cooked egg noodles, and sour cream.
  • Spread noodles in bottom of prepared pan. Top with meat sauce. Sprinkle with cheddar, Parmesan and mozzarella cheeses.
  • Cover and bake 35 minutes. Uncover and bake and additional 5 minutes.

Notes:

  4. I took this to my granddaughters 4th birthday party which was a potluck. It was on the table approximately 30 minutes…and then gone. The only change I made was I added sauteed red/green bell peppers, onions and celery which added to the overall flavor. This is a dish I will be making again and again to take with me when I’m asked to bring a dish. Everyone loved it.

  5. I don’t think I’ve ever commented on your blog. I read, pin recipes and move on however, I HAD to let you know this dish was a big hit with the hubs. He’s southern and if it isn’t fried or smothered in gravy he often turns up his nose. Feeding him is a real challenge but this…THIS DISH? He LOVED it! Ate two helpings (the second helping larger than the first), had it again for lunch the next day and ate this for every meal until it was gone. He asked me to put this dish in rotation. Thank you, thank you, thank you!!

    1. The sour cream isn't the dominant flavor in this dish. I doubt he would know it is in there if you didn't tell him.
      What do you normally substitute for sour cream?
      Maybe cottage cheese??

  6. This is a wonderful dish. I did add to it though. I sautéed onion, garlic, bell pepper, carrots, and celery. I always look for ways to add extra veggies. I also add 1t powdered turmeric.

  7. Is this recipe supposed to say 6 ounces of egg noodles? I can only seem to find packages of 8, 12, and 16 oz egg noodles.

    1. I like to use a pound of egg noodles and mix in 2 cups sour cream and all the parmesan. Then make the meat as written and spread it on top in a deep lasagna pan. Sour cream noodles are of my husband’s favorite dishes and I find that to be the perfect ratio of meat to noodles. This is a great recipe and its not too spicy at all.

  8. This was SO good!! I made it a few nights ago and it was a huge hit with the whole family. My husband could not quit raving about it (after eating 2 large portions), and said he'd like to have it every 2 weeks. It's definitely going into our regular rotation of meals! Thanks for sharing. 🙂
