Easy Beef Noodle Soup

We are knee-deep into soup season in our house. We love to warm up on these chilly nights with a big bowl of soup. This Slow Cooker Beef Stroganoff Soup has quickly become a new favorite. We’ve made it several times in the past few weeks and just can’t seem to get enough of it. Especially Chicken Legs. He LOVES everything about this soup!! Steak, noodles, and mushrooms simmered all day in a savory broth – YUM! Great recipe for cold nights in the Fall and Winter.

How to Make Easy Beef Stroganoff Soup

This soup is very easy to make with only a few simple ingredients. Combine flour, salt, and black pepper in a Ziploc bag. Add beef cubes and seal bag. Shake the bag to coat the beef pieces to coat. Heat oil in a 12-inch skillet over medium-high heat. Remove meat from the flour mixture and shake off excess. Add beef to the skillet and cook until brown.

Transfer sauteed beef to the slow cooker with a slotted spoon. Add beef broth, sliced mushrooms, onion soup mix, tomato paste, and Worcestershire sauce to the crock pot. Cover and cook on LOW heat for 8 hours. About 15 minutes before you are ready to serve the soup, toss in some egg noodles and sour cream. The noodles will cook right in the slow cooker. How awesome is that?!?!

  • What kind of cut of beef do you use? I used a sirloin roast in this soup. You can also use a Chuck roast, blade roast or rump roast.
    • You can also use a package of stew meat.
  • Do I need to pan-sear the roast before adding it to the slow cooker? I always cook the roast before adding it to the slow cooker. If you are pressed for time, you can skip this step.
  • Can substitute red wine for some of the beef broth for extra flavor.
  • I use medium egg noodles. You can use any size of egg noodles you prefer. Just cook the soup until they are tender.
    • You can substitute any short noodle you have in the pantry.
  • Can I make Beef Stroganoff Soup on the Stovetop? Yes! You can cook the soup in a large Dutch oven on the stovetop. Saute the beef. Add mushrooms, onion soup mix, beef broth, tomato paste and Worcestershire sauce. Bring the soup to a boil and simmer over medium heat until the beef is tender. Whisk ¼ cup of hot broth into sour cream. Pour into the pot. Add noodles to the pot. Cover and cook until noodles are tender.
  • Can I freeze leftover Slow Cooker Beef Stroganoff Soup? Yes. The noodles will absorb some of the liquid. Add extra beef broth or water to get the soup back to the desired consistency.
  • If you are making this soup exclusively for a freezer meal, you can leave out the noodles and add them when you reheat the soup.
  • Store leftovers in an airtight container in the refrigerator.

Ingredients:

  • lb sirloin tip roast cut into 1-inch cubes
  • ¼ cup all-purpose flour
  • ½ tsp salt
  • ½ tsp ground pepper
  • 2 Tbsp canola oil
  • 8- oz sliced white mushrooms
  • 1 (1-oz) envelope dry onion soup mix
  • 4 cups beef broth
  • 1 Tbsp tomato paste
  • 1 Tbsp Worcestershire sauce
  • 2 cups uncooked medium egg noodles
  • 1 cup sour cream

Instructions:

  • Combine roast, flour, salt and pepper in a large ziplock bag. Seal and shake to coat beef.
  • Heat oil in a large skillet over medium-high heat. Remove beef from ziplock bag, discard any excess flour mixture. Sauté beef until browned, about 5 minutes.
  • Place meat into slow cooker. Add mushrooms, onion soup mix, beef broth, tomato paste and Worcestershire sauce. Cook on LOW for 8 hours, until beef is tender.
  • Whisk ¼ cup of hot broth into sour cream. Pour into slow cooker.
  • Add noodles to slow cooker. Cover and cook on LOW for 15-30 minutes, until noodles are tender.
