Easy Sausage Alfredo Pasta Casserole

This Three Cheese Italian Sausage Alfredo Bake was a huge hit in our house. Pasta and Italian sausage tossed in ricotta, mozzarella, parmesan, and Alfredo sauce. SO good! This makes a ton. It is great for potlucks and dinner parties. All you need is some garlic bread and a simple salad and you have a delicious feast in a snap!

How to Make Three Cheese Italian Sausage Alfredo Bake

This pasta casserole is super easy to make. Start with boiling the pasta. While the pasta is cooking, brown some Italian sausage. Finally mix together Alfredo sauce, sour cream, ricotta, garlic, eggs, parmesan cheese, parsley, cooked sausage and pasta. Spread the mixture into a baking dish, top with mozzarella cheese and bake.

  • Can substitute a roll of breakfast sausage for the Italian sausage.
  • Can substitute ground beef or ground turkey for sausage.
  • I used penne pasta. Feel free to substitute elbow macaroni, rigatoni, or fusilli.
  • This can be made ahead of time and refrigerated overnight.
  • You can assemble the casserole and freeze for later. To bake after freezing, thaw completely and bake as directed.
  • Write the baking directions on the foil covering the pan so you know what temperature and time to cook the casserole.
  • You can freeze the baked casserole for later. To reheat after freezing, thaw completely. Cover with aluminum foil and bake at 350ºF for 35 to 45 minutes.
  • This makes a lot of pasta. You can split it between two 9×9-inch pans and freeze one for later.

Ingredients:

  • pounds Italian sausage casings removed
  • 1 (16-oz) package penne pasta
  • 1 (22-oz) jar Alfredo sauce
  • 1 (8-oz) container sour cream
  • 1 (15-oz) container ricotta cheese
  • 2 garlic cloves minced
  • 2 large eggs lightly beaten
  • ¼ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • 2 cups mozzarella cheese

Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • In a large skillet, cook sausage until no longer pink. Drain fat.
  • Prepare pasta according to package directions; drain and return to pot. Add cooked sausage, Alfredo sauce, sour cream, ricotta, garlic, eggs, parmesan and parsley. Stir well.
  • Pour pasta mixture into prepared pan and top with mozzarella cheese.
  • Bake, uncovered, for 30 to 40 minutes, until bubbly.

  1. Made this for my weekly sewing group and everyone loved it. I had leftovers so hubby had it for supper and he also enjoyed it. Being honest, as much as I enjoyed the sausage, I think I would have preferred using chicken. Maybe because that’s what I’m used to? I added a package of frozen broccoli that I thawed and drained—nice addition!☺️

    1. I haven’t made this with gluten-free pasta, so I can not say how the pasta would hold up. If you’ve had success using gluten-free pasta in other baked casseroles, I would try it.

  2. What brand of Alfredo sauce do you use? If you make it ahead and refrigerate does that change the cooking time or do you take it out and put it on the counter first and for how long? Love all your recipes!!!

    1. I like Trader Joe's alfredo sauce. If you make it ahead of time, you will need to add a few minutes to the cooking time or let it sit out for about 30 minutes before baking. Enjoy!
