Ham & Cheese Croissant Casserole – we love this overnight breakfast casserole! It reminded me of a delicious Croque Monsieur. Ham, buttery croissants, swiss cheese, eggs, half-and-half, dry mustard, honey, salt, and pepper. Assemble the casserole the night before and bake in the morning. Perfect for holiday mornings, brunch, and overnight guests. This is a great way to use up any leftover holiday ham! Equally delicious for lunch or dinner.

Make-Ahead Breakfast Casseroles

Easter is this weekend. If you are like us, you are probably making a big ham for Easter dinner. I look forward to all the leftovers! This Ham & Cheese Croissant Casserole is one of my favorite ways to use up all that leftover ham. Flaky croissants, ham, swiss cheese, and creamy eggs. The easy make ahead breakfast recipe is perfect for holiday mornings, Sunday brunch, and busy weekday mornings.

How to Make Ham & Cheese Croissant Breakfast Casserole

The casserole is very easy to make with only a few simple ingredients. Chop croissants into small pieces. Place the croissant pieces in the bottom of a 9×9-inch casserole dish. Sprinkle chopped ham and shredded cheese over the top of the croissants. In a large bowl, whisk eggs, half-and-half, dry mustard, honey, salt, and black pepper. Pour the egg mixture over the top of the casserole. Cover the pan with plastic wrap and refrigerate overnight. The next morning, remove the casserole from the refrigerator. Pre-heat oven. Bake the casserole covered with aluminum foil for 35 minutes. Remove the foil and bake for an additional 25 minutes, or until set. Garnish the casserole with chopped green onions or fresh parsley.

  • This breakfast casserole needs to be made at least 8 hours in advance. You can refrigerate it up to 24-hours in advance. The croissants need time to soak up all the yummy egg mixture.
  • You can use any cheese that you prefer. Gruyere cheese, sharp cheddar cheese, or parmesan cheese are all delicious.
  • Can substitute heavy cream for half-and-half.
  • You can double the recipe and bake in a 9 x 13-inch baking dish.
  • Can You Freeze Sausage Croissant Breakfast Casserole? Yes! You can make this casserole in advance and freeze it unbaked or baked.
    • To bake the casserole after freezing, thaw completely in the refrigerator and bake as directed below.
    • To reheat after freezing, thaw completely in the refrigerator and reheat in the microwave or covered in the oven. I suggest reheating at 350ºF for about 30 minutes.
  • Store leftovers in an airtight container in the refrigerator.

Now, let’s talk about croissants. The picture above is a croissant. You find them in the bakery at the grocery store or your local bakery. This recipe does NOT use refrigerated crescent rolls. Croissants and crescent rolls are NOT the same thing. Please make a note to use croissants that you buy at the grocery store.

This has quickly become one of our favorite breakfast recipes. It is our go-to recipe for Christmas morning and overnight guests. Whip this up before bed and just pop it in the oven when you get up. Ham & Cheese Croissant Casserole – love this overnight breakfast casserole! Ham, croissants, swiss cheese, eggs, half-and-half, dry mustard, honey, salt and pepper. Assemble the night before and bake in the morning. Great way to use up any leftover holiday ham!!

Ingredients:

  • 3 (5-inch) large croissants
  • 1 (8-oz) package chopped cooked ham
  • 1 (5-oz) package shredded swiss cheese
  • 6 large eggs
  • 1 cup half-and-half
  • 1 tsp dry mustard
  • 2 Tbsp honey
  • salt and pepper, to taste

Instructions:

  • Chop croissants into 10 to 12 pieces. Place in a lightly greased 9×9-inch deep dish pan.
  • Sprinkle ham and cheese over chopped croissants.
  • Whisk together eggs, half-and-half, dry mustard, honey, salt and pepper.
  • Pour egg mixture over croissant mixture. Press croissants down to submerge into egg mixture. Cover with aluminum foil and refrigerate for 8 to 24 hours.
  • Preheat oven to 325ºF.
  • Bake casserole covered for 35 minutes. Uncover and bake an additional 25 minutes, or until set. Let stand 10 minutes before serving.

    1. I haven’t doubled this. But I would assume you would need to add 10 or 15 minutes to the baking time. You will just have to watch it and see how it looks.

  2. this sounds amazing!! we have local bakery that makes the best, softest cheddar cheese bagels. YES, I know bagels are not usually 'soft', but these are so good, you don't even need cream cheese. we usually get a couple of dozen on the weekends, so, I'm going to try this with a couple of the bagels instead of croissant's. I'll let ya know how it turns out.
