How to Make Sweet & Spicy Bacon Wrapped Pork Tenderloin

This pork tenderloin is effortless to make with only a few simple ingredients. In a small bowl, combine chili powder and brown sugar. Wrap the tenderloin in uncooked bacon strips. Sprinkle the dry rub over the bacon. Place the pork on a sheet pan topped with a wire rack. Bake the pork in a preheated oven for 20 to 25 minutes.

Use a meat thermometer to check for an internal temperature of 145ºFin the center of the pork. Once the pork is at a safe temperature, place the pan it under the oven broiler for a few minutes to crisp up the bacon slices. Let the meat rest at room temperature for 5 minutes before slicing. Garnish with fresh parsley if desired.

  • Please note that a pork loin and pork tenderloin are NOT the same cut of meat. Tenderloins are thin and small. Pork loins are wide enough to cut pork chops from it.
    • Pork tenderloin is a very tender cut of meat, It is my favorite cut of pork.
  • For best results, remove the silver skin on the side of each pork tenderloin.
    • The silver skin is a silver membrane on the pork tenderloins. It is a thick connective tissue and it doesn’t break down when the pork is cooked.
    • The best way to remove the silver skis is to use a sharp knife and carefully cut it off. If you don’t remove the silver skin, you will have a tough uneatable area on each tenderloin.
  • This does have a tiny little kick from the chili powder, so adjust the amount depending on your preference.
    • Feel free to adjust the seasonings in the dry rub. Black pepper, salt, and garlic powder are all great.
  • I use regular strips of thin bacon. You can use thick cut bacon if you prefer. You may need to broil the bacon longer to ensure crispy bacon.
  • Is Sweet & Spicy Bacon Wrapped Pork Tenderloin gluten-free? Yes! All of the ingredients in the recipe are gluten-free.
  • Can Pork be pink? Yes! It is perfectly SAFE to eat pink pork. Pork needs to have a minimum internal temperature of 145ºF.
    • We like to cook it on the higher end of medium-rare and let the meat rest for about 5 minutes covered in aluminum foil before slicing. It only takes about 15 minutes to reach 145ºF, depending on how big your pork tenderloins are.
  • For extra flavor, brush the tenderloin with BBQ sauce before broiling.
  • Store leftovers in an air-tight container in the refrigerator.

  • Preheat oven to 425ºF. Line a rimmed baking sheet with foil and top with cooking rack.
  • In a shallow dish, combine brown sugar and chili powder.
  • Wrap bacon around pork tenderloin, securing with toothpicks if necessary.
  • Coat bacon wrapped pork tenderloin with the brown sugar and chili powder mixture. Place on baking sheet.
  • Bake for 25 minutes. Place under broiler for 2 to 3 minutes to crips up bacon, if desired.

  1. Stephanie I made this recipe last night for supper. And it turned out perfectly. I cooked it for just the 25 minutes as you state in the recipe & the pork was done to perfection. I did not broil them because the bacon was already crisp. The flavor of the seasoning was excellent. And what I like about it there is NO salt in it. I think next time I may try seasoning the tenderloins with the spice mixture before I wrap the bacon around them & then season them again once the bacon is wrapped around them. I loved the taste of the seasoning that much. Thank you so very much for sharing this recipe. This is definitely a keeper to make again & again.

  2. Made this tonight! I think my pork tenderloin must've been a little thicker; it was a little underdone at one end. Nothing a couple of minutes in the microwave couldn't fix, though. I had it with cauliflower risotto (Alexia brand frozen, not something from scratch).
