Does anyone else miss the Carrot Salad from Chick-fil-a? It was always a favorite side dish. I hated when they pulled it from the menu!! I came across a recipe for Carrot Salad in one of my cookbooks and decided to give it a try. OMG! SO good!! Carrots, raisins, pineapple, and coconut. I mean, what’s not to love?!?! Chicken Legs isn’t a carrot fan and was totally dreading tasting this dish. BUT One bite and he was a fan! He LOVED it! I knew he would.

How to Make Carrot & Raisin Salad with Pineapple and Coconut

This side dish is very easy to make. Grate some carrots and place them in a bowl. Add crushed pineapple, coconut, raisins, sugar, and mayonnaise. Mix everything together and refrigerate a few hours before serving.

  • I used a box grater to grate the carrots. I do not suggest using preshredded carrots in this reicpe. They are dry and hard. Freshly grated carrots taste much better!
  • This can be made in advance and refrigerated until you are ready to serve. I think it gets better as it sits in the fridge.
  • Is Carrot Salad gluten-free? Yes! All of the ingredients in the recipe are gluten-free.

Easy Side Dish for a Crowd

Ingredients:

  • 4 cups grated carrots about 1 pound
  • 1 8-oz can crushed pineapple
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup raisins
  • 2 Tbsp sugar
  • 1/2 cup mayonnaise

Instructions:

  • Combine all ingredients in a medium. Stir until creamy.
  • Cover and refrigerate until well chilled.

  1. I’ve been making this salad for years. I like to add some dry orange Jell-O. It gives it sweetness, flavor & color. You can omit the coconut and sugar and it’s still delish! You can also “plump” the raisins in heated pineapple juice & then chop them. This is one of my favorite salads!

  2. This is a very good recipe! Great way to use carrots and add color to the meal! I added a pinch of nutmeg and cinnamon. This will be my quick go to side dish when I need veggies but a sweet kick!
