Easy Chicken Marinade with Pineapple Juice

This Pineapple Grilled Chicken is a new favorite! It is LOADED with tons of flavor. The chicken is so tender and juicy. We have made this several times over the past few weeks and just can’t seem to get enough of it. It even tastes great leftover! We love it chopped up on a salad or in a wrap. Give this a try the next time you fire up the grill. I promise you won’t be disappointed!

How to Make Pineapple Grilled Chicken

This marinade is very easy to make. Whisk together vegetable or canola oil, pineapple juice, paprika, basil, onion, thyme, and garlic. Place chicken breasts in a ziplock freezer bag, pound to an even thickness, and pour marinade into the bag. Place the chicken in the refrigerator and marinate for a few hours up to overnight. About an hour before cooking the chicken, remove the chicken from the marinade. Cook the chicken on the grill until it reaches an internal temperature of 165ºF.

  • You can use this marinade on any cut of chicken you prefer – tenders, breasts, thighs, or legs.
    • Can use boneless or bone-in chicken. Adjust the cooking time to ensure an internal temperature of 165ºF.
  • We like to let the chicken marinate overnight to achieve maximum flavor. I whisk up the marinade before I go to bed and the chicken is ready to grill for lunch or dinner the next day.
  • My #1 tip when grilling chicken is to pound the chicken breast to an even thickness. We put the chicken in a ziplock bag and use a flat meat mallet to carefully pound out the hump. This ensures that the chicken cooks evenly and you don’t have juicy chicken and half-dry chicken.
  • No grill? No problem! You can cook the chicken inside. Pan sear the chicken breasts in a skillet for 3 to 4 minutes per side. Place the chicken on a rimmed baking sheet. Bake at 400ºF for 10 minutes, or until it reaches an internal temperature of 165ºF.

    1. sure! I prefer to pan sear the chicken for a 3 or 4 minutes on each side and then finish them off in the oven at 400ºF for about 10 minutes.

  1. This looks delish! What brand of chicken breasts do you use? They don't look too big, which is what we like!
