Do you need a last-minute dessert for your Memorial Day cookout? Look no further! This Pineapple Pie is super simple to make and it tastes delicious!! Sweet pineapple and coconut pie – what’s not to love?!?! We served the pie as is, but it would be great with a dollop of whipped cream or vanilla ice cream.
How to Make Pineapple Pie
This dessert is easy to make with only a few simple ingredients. In a large bowl, stir together crushed pineapple, sweetened coconut, melted butter, cornmeal, flour, vanilla, sugar, and eggs. Pour the pineapple mixture into an unbaked frozen pie crust and bake until set.
- Do not drain the canned pineapple. You are going to use the fruit and liquid in the can.
- I use a frozen pastry pie crust.
- There is no need to thaw the pie crust before using.
- Can substitute a homemade pie dough or a graham cracker crust if you prefer.
- If the pie crust starts to get too brown, cover the pie with aluminum foil.
- Sometimes I sprinkle a little brown sugar on top of the pie before baking. It gives the pie a nice crunch.
- Can homemade pie be frozen? Yes! Bake and cool the pie completely. Cover the pie with plastic wrap and aluminum foil. Place the pie in a gallon freezer bag and freeze.
- When ready to serve, thaw in the refrigerator and enjoy.
- Store leftovers covered in the fridge.
What to Serve with Homemade Pie
This pineapple dessert only takes a couple of minutes to whip up. Basically, just whisk everything together, pour the pineapple pie filling into a deep-dish crust, and bake. Easy Peasy!!
The pie can be served warm or cold. I prefer to make this pie a day in advance and refrigerate it overnight. I take the pie out of the refrigerator about 30 minutes before serving. If you want to serve the pie warm, just pop each slice in the microwave for a few seconds.

- 1 (8-oz) can crushed pineapple, undrained
- ½ cup shredded coconut
- ½ cup butter melted
- 1 Tbsp cornmeal
- 1 Tbsp all-purpose flour
- 2 tsp vanilla
- 2 cups sugar
- 4 large eggs beaten
- 1 (9-inch) frozen deep-dish pie crust
Instructions:

I did not pre-bake the crust.
Everyone thought it was delicious…had to pass on recipe…. followed pretty much everything… except I used Knudson's boxed pie crust where you add water and roll out and I added a hit of cinnamon to it
Just wondering if I could leave out the cornmeal and just double the flour? Also, what type of flour do you use? Is Self Rising okay?
It won't be the same without the cornmeal, but you can try it. I used all-purpose. I suggest following the recipe as written in order to ensure a good result.
