This Baked Greek Squash and Feta is a favorite in our house. It is SUPER easy to make and it tastes great! We make this all the time! It goes with basically everything – grilled chicken, pork, steak, burgers, salad. You could even toss it in some pasta! This is perfect for when you need a quick weeknight vegetable.
How to Make Zucchini and Summer Squash in the Oven
I use a combination of yellow squash and zucchini in this recipe. It only takes a few minutes to prepare. Use a mandoline slicer to slice the squash and zucchini into thin slices. Toss the sliced squash in olive oil, Greek seasoning, and feta cheese. Spread the squash out on a rimmed baking sheet and bake. It was ready and waiting before my oven had preheated.
Feel free to add some sliced onion and tomatoes to the squash mixture. This would also be great with sliced fresh mushrooms.
I know a lot of people aren’t familiar with Greek seasoning. I used Cavender’s All-Purpose Greek Seasoning. It is readily available at the grocery store, Walmart and Target. I use it on tons of stuff! They also have a salt-free version if you prefer.

Baked Greek Squash and Feta
Equipment:
Ingredients:
- 2 medium zucchini squash
- 2 medium yellow squash
- 2 Tbsp olive oil
- 1 Tbsp Greek Seasoning
- 1 cup crumbled feta cheese
Instructions:
- Preheat oven to 450ºF.
- Cut squash in slices and toss with olive oil. Place on a cookie sheet in a single layer.
- Sprinkle squash with Greek Seasoning and feta cheese.
- Bake for 20-25 minutes, until lightly browned on top.
