We love this Cheesy Onion and Chive Potato Casserole. We’ve been making it all summer long to go with all our grilling recipes. It is super easy to make and it tastes great!!! There are only 5 ingredients in this cheesy potato casserole – frozen hash browns, cream of chicken soup, bacon, cheddar cheese and chive & onion cream cheese. The chive & onion cream cheese makes all the difference in this casserole. It makes the potatoes so creamy and delicious!

You can make this potato casserole ahead of time and refrigerate or freeze for later. I make this and divide it between three or four aluminum pans. I cook one and freeze the other pans for a quick side dish later. Just thaw the frozen potatoes and cook as directed.

I used a bag of diced frozen hash browns. You can use shredded hash browns if you prefer. Either one will work just fine in this casserole. If you don’t like cream of chicken soup, feel free to use your favorite cream of soup in the casserole.

Cheesy Onion and Chive Potato Casserole – SO delicious!! Only 5 ingredients – frozen hash browns, cream of chicken soup, cheddar cheese, bacon and chive and onion cream cheese. Can make ahead of time and refrigerate or freeze for later. Great for a crowd!

Ingredients:

  • 2 (10.5-oz) cans Unsalted Cream of Chicken Soup
  • 2 (8-oz) containers chive & onion cream cheese, room temperature
  • 2 cups shredded cheddar cheese. divided
  • 1 cup chopped cooked bacon
  • 1 (32-oz) bag frozen diced hash browns

Instructions:

  • Preheat oven to 375ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • In a large bowl, combine soup, cream cheese, 1 cup cheddar cheese and bacon.
  • Add hash browns and stir until coated. Pour into prepared pan.
  • Bake for 30 minutes. Top with remaining 1 cup cheddar cheese. Cook an additional 5 to 10 mintues.

Notes:

  • I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.
  • Can make casserole in advance and refrigerate or freeze for later.
  • If baking directly from the refrigerator, you may need to add a few minutes to the cooking time.
  • If baking after freezing, thaw completely and bake as directed above.

  1. Great the way it is, but u can also add some diced and sauted green peppers. Also, the bacon can be replaced with some Armour Sliced Dried Beef. Just remember to rinse the beef before chopping and adding. It’s too salty otherwise. Another alternative we’ve done is diced ham in place of the bacon. Also a big hit.

  2. I made this last night and it was a hit! Hubby loved it as well. The only thing I did different was add a little more baking time. Recipe called for 30 minutes, but I found my potatoes weren’t quite done so I left them in the oven about another 20 minutes.

  3. Looks wonderful BUT I don't every have frozen Diced hash browns on hand. I adore the Hungry Jack instant hash browns. Can they be used by any chance. Otherwise this has to be planed and not a spur of the moment

    1. What a great idea! But unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.

  4. I added fresh green onion and some finely chopped cauliflower to the mix, then some bread crumbs on top of the top layer of cheese…. kids devoured it!!! Also used ready cooked bacon bits for quicker prep 🙂

  5. Couple of questions: Do you freeze it before or after baking and it I just freeze the leftovers. I usually unthaw in the refrigerator and take it out of the refrigerator to bring it to room before baking or re-heating. I take it that is the way to do it. Let me know the answers to the questions.
