A few months ago we had dinner at a friends house. She was dabbling in the Keto diet and served these Cheesy Keto Biscuits. I wasn’t sure what to expect, but they were DELICIOUS! Chicken Legs went crazy over them! He couldn’t stop eating them. I snagged the recipe from her so I could make them at home.

Now, these are not low-fat or low-calorie biscuits. They are LOADED with TONS of cheese. Cream cheese and mozzarella cheese. The only special ingredient in these Cheesy Keto Biscuits is Almond Flour. Almond flour is pretty common these days. I’ve found it at Walmart, Target, and Publix.

I used a 12-inch skillet and a large cookie scoop and got 16 biscuits. If you don’t want individual biscuits, I think you could just put the dough in the skillet or baking pan and make a loaf of bread. I like to brush the cooked biscuits with some melted butter and garlic powder.

Even if you aren’t doing the Keto diet, these biscuits are sure to please! We’ve made them several times and enjoyed them every single time!! They are great if you are doing a low-carb diet and missing bread!

Ingredients:

Instructions:

  • Preheat oven to 400ºF. Spray a 12-inch cast iron skillet with cooking spray. Set aside.
  • In a saucepan over low heat, melt the cream cheese and mozzarella cheese together. Stir until smooth. Remove from heat.
  • In a large bowl, combine the melted cheese, eggs, 4 Tbsp baking powder, and almond flour. Mix until smooth. Let stand for 10 to 20 minutes.
  • Using a large cookie scoop, scoop dough and place in 12-inch cast iron skillet. Place skillet in refrigerator for 10 minutes.
  • Remove skillet from refrigerator. Bake for 20 to 25 minutes, until golden brown.
  • Brush cooked biscuits with melted butter.

  10. Mine didn’t rise but taste good. I mixed all my ingredients together and then mixed in the Melted cheeses. Do you think I overworked the batter? Is there a particular order I need to add ingredients?

    1. I add the ingredients in order as listed above. Could your baking powder be bad? Maybe try a new can and that might help with the biscuits rising more.

  12. Question? I have made this 3-4 times, and it is really tasty! How do you mix yours? Do you use an actual mixer? I do not, and do not really get anything ‘smooth’. I just mix it the best I can with a wooden spoon. I also just drop it in a butter-greased glass pie pan (it’s what I have). Yum! Just wondering how you achieve ‘smooth’… Thanks for the recipe!

  13. I just made these in a foil lasagna pan & they turned out FANTASTIC! The only modifications I made other than the pan (I made balls &baked them in the pan that way) was I subbed one cup of shredded cheddar to mix with the mozzarella & I added a dash of herbs in the dough instead of the garlic butter on top as I don’t tolerate garlic well. Thank you for an easy keto friendly bread recipe! I have one for keto Hawaiian rolls that’s good but goes flat so I’m going to try the 4Tbsp of baking powder with that recipe to see if that helps.

  18. Just tried this with some alterations; used coconut flour (didn't have any almond in the house) and hard cheddar and marbled cheddar instead of the mozzarella. I also baked them in a muffin tin individually which cut a couple mins off the cooking time! They turned out pretty tasty and the hard cheddar flavour offset the coconut flour (although it does still taste quite coconutty). Also mixed in some parsley with the garlic butter on top to make them look cuter. All in all a great recipe, would like to try with almond flour next time (or even regular flour if I'm not on keto), thanks for posting! 😀

      1. I made these tonight for dinner with a rotisserie chicken we made. They are so delicious! I did add a smidgen of garlic powder to the batter. And in the butter for the top. Other then that, followed the recipe to the letter. They taste incredible. I’d love them even if I wasn’t on Keto. Bravo!!

    1. Mine also went flat in the fridge and were very dense (didn't rise), but were still tasty. I used aluminum free baking power. Wonder if that made a difference?

    1. A dash of garlic powder and a tablespoon of butter is usually what I use. Feel free to adjust to your preference

  27. Interesting…..wonder what putting the bread in refrigerator does to it? Normally you put bread in a warm place to rise. When you scooped out the bread dough did you start in the middle or sides? Just curious how they got their shape.

      1. Just wondering if we could just melt the cream cheese and the Mozzarella cheese together in the microwave like we do for fathead dough ?

    1. I would scoop the biscuits on the edge of the skillet first to give it structure and fill in the middle scoops last, 🙂
