Easy Taco Soup with Pulled Pork

Stop what you are doing and make this Pulled Pork Taco Soup! OMG! It is SOOOOO good!! I’ve made taco soup with ground beef and chicken, but this pulled pork version is my favorite!! WHY haven’t I done this before?!?!? The pulled pork gave the soup a nice smoky flavor. This soup is great for potlucks and tailgating this Fall. Whip up some cornbread and you are set!

How to Make Taco Soup

This taco soup takes less than 30 minutes to make from start to finish. In a Dutch oven, combine pulled pork, black beans, pinto beans, corn, Rotel diced tomatoes and green chiles, taco seasoning, ranch seasoning, and chicken broth. Bring to a boil and simmer 20 minutes.

  • I bought my pulled pork at Costco. You can also find pre-cooked pulled pork at the grocery store or you can go to your favorite BBQ joint and grab a pound of pork for this recipe.

  • You can use any beans you prefer in this soup.
  • Is taco soup spicy? We did not think this soup was spicy. If you are worried about the heat, use a can of MILD Rotel tomatoes.
  • Can taco soup be made in the slow cooker? Yes! just dump everything in the crockpot and cook on LOW or HIGH for a few hours. I like to whip up a batch in the slow cooker for tailgating and parties.
  • Can taco soup be frozen? Yes! You can freeze the soup for a quick meal later. To reheat, thaw and reheat on the stove or in the microwave.
  • To make this a freezer meal, simply place all the ingredients in a gallon freezer bag and freeze. When ready to make the soup, place the contents of the freezer bag in the slow cooker and cook on LOW all day. There is no need to thaw the contents before adding them to the crockpot. Just make sure to freeze the bag upright so it will fit in the crockpot easily without thawing.

  • In a Dutch Oven, combine cooked pulled pork, beans, tomatoes, corn, Ranch mix, taco seasoning and chicken broth.
  • Bring to a boil. Reduce heat and simmer for 20 to 30 minutes.

  3. Making this now, didn’t have either of the flavoring packets so used the recipes provided for both. I also had to sub nonfat dry milk for the buttermilk powder, added a splash of lemon juice to the soup to round it out. It’s still simmering but as of right now, the broth tastes spot on for tortilla soup. I was simply trying to use up some leftover pulled pork, did not expect to pull off something this tasty so quickly! Thanks!
