To cut down on the prep time of these Crack Chicken Pinwheels, I used rotisserie chicken and precooked bacon. I always have both in the house for quick recipes like this. Feel free to use low-fat cream cheese and turkey bacon if you are watching calories. You could also use whole-wheat tortillas. Now they are basically health food! LOL!

Ingredients:

Instructions:

  • Mix softened cream cheese with the ranch powder, cheddar cheese, 1 Tbsp milk, bacon and chicken until well combined. Add more milk if desired.
  • Spread about ¼ cup of chicken mixture evenly on each tortilla.
  • Roll the tortilla up gently, yet tightly to make sure it holds together and keeps its shape.
  • Refrigerate for about 30 minutes to firm up the softened cheese. Cut off ends of tortilla roll and cut into 1-inch slices.

Notes:

Can make in advance and refrigerate overnight before slicing.

  3. These were a HUGE hit for our football tailgate. The only substitution I used was Fiesta ranch dry seasoning over the regular ranch seasoning and they were perfect! I’ll definitely make them again! Thank you!

    1. I was going to grab cream cheese and sometimes its hard to fix green onions in our grocery. Saw the onion and chive cream cheese. This was literally perfect. I didn’t have to get the chives and it was almost 8 oz (7.5) so I just added a dab of the jalapeno cream cheese we had at home.

I just subbed the Tortilla for a low carb tortilla and they tasted amazing! I just put them in my toaster over for about 15 mins at 375 and they tasted like a Costco Chicken Bake 🙂 thanks for the recipe!

    1. oh….we travel 2 hours to tailgate and tailgate all day depending on game time. Also we can keep on ice, etc.

  7. These were great! I thinking adding something sweet like craisins or adding hot sauce like someone else mentioned would be great as well! I made these for the first time today and I think I probably should have added a little more milk and spread the mix a little thinner for best results. I’m also not sure I got the right ranch mix.. but still very good!

  9. Hi, Stephanie! I recently began an externship that requires half my day to be at a clinical site, and the second half of my day either on campus doing labs, or at home doing online schooling. I have now made these several times – they are PERFECT for me to eat during my drive from the clinical site to campus, and give such a great burst of protein and energy that I haven’t dealt with the “after-lunch crash” that we all know so well!   11. I can’t get the dry ranch mix here where I live so could I use the salad dressing instead?

    1. If you click on the words “ranch mix” in the list of ingredients in the recipe, it will take you to a homemade ranch mix that is awesome!! 😍

    1. It just depends on how thick you slice the pinwheels, but one batch should get you about 3 dozen.

    1. You can. You will need to let the mixture come to room temperature so you can spread it easily.
      You can also make the tortillas and refrigerate them and slice them when ready to serve. They don't get soggy.

      1. We like adding dried cranberries to our dried beef and green onion roll ups.
        Might have do these and add the dried cranberries to these for a pop of flavor!!

  13. Try chopped green chiles to the mix for a slight zip…mild but so good…been making them similar for years for parties and always a huge hit. Also minced black olives…. so good.

  14. When you say "1-1/2 Tbsp ranch mix", are you talking about Hidden Valley dry salad dressing mix or the already made ranch dressing for salads? These look great and easy. Can't wait to make them.
