Easy Sausage Breakfast Casserole

This Sausage & Cream Cheese Grits Casserole is everything I love about breakfast. Sausage, cream cheese, cheddar cheese and grits. Happiness in every single bite! The best thing about this casserole is that you can make it ahead of time and freeze it unbaked for an easy meal later!!

We love eating this casserole for breakfast, brunch, lunch & dinner. It is delicious at any time of day. All you need is a side of fruit and some biscuits and you are set!

How to Make Sausage & Cream Cheese Grits Casserole

This casserole is very easy to make. Brown breakfast sausage in a skillet until no longer pink. Drain the fat and stir in cream cheese. Set aside. In a large stockpot, bring chicken broth to a boil and add grits. Cook until the grits are thickened and add butter, Velveeta, milk, and eggs. Stir in the sausage mixture and transfer to a baking dish. Top with shredded cheese and bake.

  • I used Jimmy Dean sausage in this recipe. You can use any brand of breakfast sausage you prefer.
  • This recipe uses quick-cook grits. Do NOT use instant grits!
  • I like to save a little of the sausage and cream cheese mixture to sprinkle on top of the casserole. This is totally optional. I just think it makes a nice presentation. I also sprinkle it with a little dried parsley for color.
  • Is Sausage Grits Casserole gluten-free? Yes! Make sure to use a gluten-free sausage for a gluten-free casserole.
  • Can Sausage Grits Casserole be made in advance? Yes! You can assemble the casserole the day before and refrigerate before baking. You may need to add a few minutes to the cooking time.
  • Can Sausage Grits Casserole be frozen? Yes! Cover and freeze the casserole unbaked. When ready to bake, place in refrigerator and let thaw overnight. Remove from the refrigerator 30 minutes before baking. Increase baking time to 60 minutes.
  • This makes a lot of food. If you don’t need to feed a crowd, you can half the recipe or split it between two pans. Bake one pan now and freeze one for later. Love a recipe that can do double-duty!

Ingredients:

Instructions:

  • Preheat oven to 350° F. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
  • In a large skillet, cook pork sausage over medium heat until no longer pink. Drain fat. Stir in cream cheese and break into crumbles. Set aside.
  • In a large saucepan, add chicken stock; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5 to 7 minutes or until thickened, stirring occasionally. Remove from heat.
  • Add Velveeta cheese and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Stir in ¾ of sausage mixture.
  • Transfer grits to prepared dish. Sprinkle with shredded cheese and remaining sausage crumbles.
  • Bake, uncovered, 40 to 45 minutes.

  1. I have large group breakfasts often & this is my #1 dish to serve. Everyone loves it! I make day before & take it out of refrigerator about 3 hours before cooking. It takes about an extra 1/2 hour when cooking. Great recipe 💖

  3. I need to feed about 10-12 people would this feed that many with each getting a pretty good size portion or should I make 2 batch’s? TIA

    1. I would say yes, but I am not sure how big a “pretty good size portion” is to you. I would say you wouldn’t need more than 1 & 1/2 batches.

    1. When in doubt I would make two batches instead of one. Sometimes doubling a recipe doesn't always turn out like a single batch.

    1. If you are making this ahead of time, freeze it unbaked, thaw and cook as directed. If you are reheating leftovers, you can reheat it covered in the oven or in the microwave

  4. What about using regular grits and not the quick cook ones? How well do you think it would work and how much longer do you think it would take to cook?

    1. I think it would be fine with stone ground grits. You will need to follow the directions on the package you use for the cook time.

    1. I am sure that it would. Stone ground grits take much longer to cook. You will need to experiment with the cooking times.
