I used frozen black eyed peas in this Black Eyed Peas with Sausage and Jalapeños recipe. They held up great. For the sausage, I used a roll of Jimmy Dean sausage. I removed the membranes and seeds from the jalapeños, so these black eyed peas weren't very spicy. Feel free to use hot sausage for even more of a kick!

ingredients:


  • 1 (16-oz) roll sausage
  • 2 Tbsp dried minced onion
  • 4 garlic cloves, minced
  • 2 tsp salt
  • 1 Tbsp cumin
  • 1 Tbsp dried sage
  • 6 cups chicken broth
  • 2 lb frozen black eyed peas
  • 4 jalapeños , diced (stems and seeds removed)

instructions:


  1. In a large pot or Dutch oven, cook sausage until no longer pink. Drain fat.
  2. Add remaining ingredients. Bring to a boil. Reduce heat to simmer.
  3. Cook until liquid has reduced by half, about 30 to 40 minutes.

  1. Oh yummo! Think this will work with canned black eye peas, I've never been able to find frozen ones and dried are good but too much work sometimes. Merry Christmas!

    1. I’m sure you could make it work with canned. I haven’t made this with canned, so I’m not sure if you would need to change the amount of liquid or cooking time.

  2. Dried is so easy with a pressure cooker. Soak overnight, drain, rinse, place in pressure cooker with water, bring to pressure, cook for three minutes, let cool the slow way. Poof. Excellent. You can throw in a little garlic salt and/or cajun seasoning when you pressure cook. Better.
