Merry Christmas everyone! I hope everyone is having a great holiday. Today I am sharing the recipe for our favorite black-eyed peas. Black-eyed peas are a MUST for good luck in the new year. These Black-Eyed Peas with Sausage and Jalapeños are the BEST of the BEST. They are effortless to make and packed full of amazing flavor! One bite and you are sure to agree!

Black Eyed Peas for New Year’s Day

Black-eyed peas are a MUST on New Year’s Day in the South. Legend has it that if you eat black-eyed peas on New Year’s Day you will have good luck and prosperity in the new year. 

The traditional meal is black eyed peas, collard greens, and cornbread

Black-eyed Peas represent “coins,” collard greens represent money or “green backs”, cornbread represents “gold,” and if tomatoes are added to Hoppin’ John it symbolizes “health”.

How to Make Black-Eyed Peas with Sausage & Jalapenos Recipe

This side dish is super easy to make with only a few simple ingredients. In a large Dutch oven or large pot, cook sausage over medium-high heat until crumbled and no longer pink. Drain excess grease. Add onion, garlic, salt, black pepper, cumin, sage, chicken broth, black-eyed peas, and chopped jalapenos. Stir to combine. Bring to a boil over high heat. Reduce heat and simmer over medium heat until the beans are tender and the liquid in the pot has been reduced by half.

  • I use frozen black-eyed peas
    • Can substitute dried black-eyed peas. Soak the peas overnight in a large pot of water before cooking.
  • For the sausage, I use a roll of Jimmy Dean pork sausage. 
    • Feel free to substitute turkey sausage.
  • Are Jalapeno Black-Eyed Peas spicy? I removed the membranes and seeds from the jalapeños, so these black-eyed peas weren’t very spicy.
    • Leave the seeds and membranes for a spicier dish.
    • For extra spicy flavor, add hot sauce, cayenne pepper, cajun seasoning, or red pepper flakes to taste.
  • Use low-sodium or not salt chicken broth to control the amount of salt/sodium in the dish.
  • What can I add to the peas?
    • bell peppers
    • bacon
    • fresh onion
    • celery
  • Can I freeze Black-Eyed Peas? Yes! Cook the peas and cool completely. Transfer peas to a freezer-safe dish and store in the freezer for up to 3 months.
  • Store leftovers in an airtight container in the refrigerator.

Black Eyed Peas with Sausage and Jalapeños – the BEST black-eyed peas EVER! I could make a meal out of these yummy peas!!! Ingredients:

  • 1 (16-oz) roll ground hot pork sausage
  • 2 Tbsp dried minced onion
  • 4 garlic cloves minced
  • 2 tsp salt
  • 1 Tbsp cumin
  • 1 Tbsp dried sage
  • 6 cups chicken broth
  • 2 lb frozen black-eyed peas
  • 4 jalapeños, diced (stems and seeds removed)

Instructions:

  • In a large pot or Dutch oven, cook sausage until no longer pink. Drain fat.
  • Add remaining ingredients. Bring to a boil. Reduce heat to simmer.
  • Cook until liquid has reduced by half, about 30 to 40 minutes.

  1. Dried is so easy with a pressure cooker. Soak overnight, drain, rinse, place in pressure cooker with water, bring to pressure, cook for three minutes, let cool the slow way. Poof. Excellent. You can throw in a little garlic salt and/or cajun seasoning when you pressure cook. Better.

  2. Oh yummo! Think this will work with canned black eye peas, I've never been able to find frozen ones and dried are good but too much work sometimes. Merry Christmas!

    1. I’m sure you could make it work with canned. I haven’t made this with canned, so I’m not sure if you would need to change the amount of liquid or cooking time.
