ingredients:

  • 1 (17.3-oz) box puff pastry, thawed
  • 1 (8-oz) wheel brie cheese
  • 1/3 cup honey
  • 11 slices bacon, cooked and cut into thirds
  • 1/2 cup chopped walnuts

instructions:

  1. Preheat oven to 400ºF. Line two baking pans with parchment paper.
  2. Unfold the pastry sheets on a lightly floured surface.  Roll each pastry sheet into a 12-inch square.  Cut each sheet into 16 squares.
  3. Remove rind on brie, if desired. Slice cheese into 32 slices.
  4. Arrange brie and bacon down center of the pastry squares. Drizzle with honey and sprinkle with chopped walnuts. Fold two opposite corners of each square over the filling and press edges to seal. Place on prepared baking sheets.
  5. Bake 15-18 minutes, until golden brown.  Serve warm or at room temperature.

  1. So if you were to make ahead, would you follow the directions until the baking part and then just refrigerate them or freeze them? Do you let them thaw before cooking if you freeze them?

    1. Correct. Make them through step 4. Freeze them. You just need to let them thaw for about 30 minutes on the counter before baking. I think they would be fine baking completely frozen. You would just need to add a few minutes to the baking time.
