How to Make Keto Taco Soup

This keto soup recipe is effortless to make with only a few simple ingredients. In a large skillet, cook ground beef over medium-high heat until no longer pink. Drain excess grease. Transfer cooked meat to a 6-qt slow cooker. Add taco seasoning, ranch seasoning, rotel tomatoes, and beef broth to the crock pot. Cover and cook on LOW heat for 6 to 8 hours. Add cream cheese and shredded cheddar cheese to the pot. Stir until the cheese melts. Garnish soup with cilantro, if desired.

  2. This was SOOOO DELICIOUS!!! I randomly purchased velveeta today at Target. I googled keto recipes using velveeta and this 5 star recipe came up! I was SOOO HAPPY as I had all the other ingredients at home as well! I made on the stovetop as it was for tonight’s dinner snd didn’t have time to slow cook! This was SOOO EASY and SOOOO DELICIOUS!!!   3. I made this last night for dinner! Awesome! I made it on the stovetop instead of using the crockpot. I browned the beef then added everything besides the broth. I tasted this mixture and OMG it was perfect for a DIP to eat with tortilla chips. In fact I did just that with a couple of chips, it was very good. But I still added the broth and finished my soup. It was good and I will be making again for sure.

      1. I made this with cooked ground venison and Turkey. Then put a jar of salsa and a rinsed can of black soybeans. Also instead of shredded cheese I used velveeta Mexican cheese with jalapeño and can of green chili peppers. Everything else the same It was delicious! Thanks for the inspiration.   4. Just made this!!! OMG it was soooo good. My plan was to make a batch and have it throughout the week for my intermittent fasting meal and my teen daughter and son pretty much finished it off right after it was finished cooking! I put aside two small bowls for myself 🤫 My 18yr old asked “where has this been his whole life”? I used chicken and added can of black beans. SO GOOD!!!

  5. Very good but I decided to go with the chipotle seasoning instead of taco & it’s too spicy, unfortunately don’t think anyone will eat it unless I can figure out how to tone the spice down. Any suggestions? Next time I’ll experiment with less chipotle. We don’t like chunks of tomato so I ran the rotel through my mini chopper to purée it & I also used ground turkey since my husband is trying to avoid red meat thank you for the recipe!

    I used 2 breast of rotisserie chicken cubes very small. Followed with remaining ingredients.
    Cooked over stove top for 45 min.

      1. Yes!! I’m a flight attendant and have eaten this on trips for 3+ years!! I put a serving in each quart size freezer after it cools and roll tightly to get the air out or a food saver. I follow her recipe exactly and freeze for up to 10 weeks and it’s as great as when it’s first made.

  12. This was a great recipe. I took creative liberty and sautéed my meat with onions. Then added a cup of black beans, with liquid and a can of drained yellow corn kernels. It was magnificent … I only wish I had made more!!!

    1. It’s not going to be completely smooth because of the ground beef & tomatoes. You can use a whisk to help incorporate the cream cheese.

        1. This was ABSOLUTELY DELICIOUS! It was rich and creamy; my family, including 3 teenage boys, could not get enough. We added sliced avocado, sour cream (and those of us not doing keto crushed up some tortilla chips and sprinkled them on top). Will definitely be adding this to the weekly menu rotation!

  14. I don’t have the velveeta cubes on hand just the sauce in pouches? Will that work. And I don’t have time to cook it for 6-8 hours since I just found this, can I put it in a normal pan and cook? And how long at what temp?

    1. You can cook it on the stove. Brown the meat, add the remaining ingredients. Bring the soup to a boil and simmer for about 20 to 30 minutes.

  15. I made this in the instant pot tonight. Used 3 cups of beef broth and didn’t add cream cheese until after releasing pressure. I would probably use a little less beef broth next time because I like a thicker soup and had to sauté and add a cornstarch/water slurry. This soup is sooooo good!

    1. It’s really good. Made it in the slow cooker. Just wish I had the macros. Anyone have them for 1 cup serving?

    1. You can certainly give it a try. I’ve only made this as written, so I can’t say with certainty how it will turn out with cheddar

  16. I'm thinking about making this for a teacher potluck. I need to have it to the school ready to go at 10am. If i put it together before bed the night before (around 11??) will it be ok for 12 or so hours??? I'd probably knock it down to "warm" once it got to school. Looks awesome!! 🙂

  17. Made this tonight. It's delicious! I didn't do the carb count, but the Velveeta has a few per serving, and so does the Rotel. Anyway, we loved it!

  18. How long can you freeze this soup? Also, do you take it out the night before and thaw in refrigerator and warm in sauce pan?

    1. It will keep a couple of months in the freezer. I do prefer to let the soup thaw overnight in the fridge before reheating on the stove or microwave
