BEST Broccoli Cornbread Recipe

I found this Broccoli Cornbread recipe in one of my old cookbooks. The ingredients intrigued me - Jiffy mix, broccoli, cottage cheese, and cheddar cheese. I couldn't wait to give this a try! I am SO glad I made this. It was delicious! This Broccoli Cornbread will definitely be a staple at all of our summer cookouts. SO easy & SO delicious!

How To Make Broccoli Cornbread with Jiffy Mix & Cottage Cheese

This Broccoli Cornbread is very simple to make. Preheat the oven. Stir together eggs, Jiffy mix, cheddar cheese, chopped fresh broccoli, cottage cheese, and a splash of milk. I had this ready to bake before the oven preheated. 

I used chopped fresh broccoli. You can substitute frozen broccoli if you prefer. Thaw and drain the frozen broccoli before adding it to the batter.

I know a lot of people have an aversion to using cottage cheese. You can not taste the cottage cheese in this recipe. I urge you to give it a try. I love cooking with cottage cheese. I won't eat it straight out of the carton, but it is wonderful in casseroles. It makes this Broccoli Cornbread so moist.

Does Broccoli Cornbread Need to Be Refrigerated?

I store any leftover Broccoli Cornbread covered in the refrigerator. To reheat, heat in the microwave for a few seconds. You can also wrap the leftover Broccoli Cornbread in foil and reheat it in the oven. The microwave is just easier and quicker.

ingredients:

  • 3 eggs, beaten
  • 2 (8-oz) boxed Jiffy cornbread mix
  • 2 cups shredded cheddar cheese
  • 2 cups chopped fresh broccoli florets
  • 3/4 cup cottage cheese
  • 1/3 cup milk

instructions:

  1. Preheat oven to 350ºF. Lightly spray a 9x13x2-inch baking pan with cooking spray.
  2. Mix together eggs, cornbread mix, cheddar cheese, broccoli, cottage cheese, and milk. Pour into prepared pan.
  3. Bake for 20 to 25 minutes.
  4. Cool and cut into squares.

NOTES:

Can substitute thawed and drained frozen broccoli for fresh broccoli.
