How to Make Ritz Carlton Chocolate Chip Cookies

These Ritz Carlton Chocolate Chip Cookies are very easy to make with very simple ingredients. One note about this recipe is that it uses cold butter.  Don’t soften the butter before making the cookies. I suggest using a stand mixer (KitchenAid mixer) to make the dough. It will make the process a breeze.

Start with beating the butter until it is soft. Next add the brown sugar, eggs, and vanilla. Finally, add the flour, salt, baking powder, and chocolate chips. Form the dough into 36 balls and you are done! I use a kitchen scale to weigh the dough. You can also use a large cookie scoop.

Now, this recipe has A LOT of butter in it. It makes the cookies crazy delicious. The most important step when making these Ritz Carlton Chocolate Chip Cookies is to refrigerate the cookies for about an hour before baking. You need to give the butter time to chill again so the cookies don’t spread and turn out super flat. Trust me on this one! I didn’t chill the dough the first time I made them. They were good but not near as good as the batch of dough that I chilled.

Can I Freeze Chocolate Chip Cookies?

YES! I actually like to scoop the cookie dough into balls and freeze the cookie dough unbaked. Place the cookie dough on a parchment-lined baking sheet and place in the freezer. Once the cookie dough balls are frozen, transfer them to a freezer bag. You can store them in the freezer for 9 to 12 months. PERFECT for a quick treat! When baking the frozen cookie dough, just add a few extra minutes to the cooking time.

You can also freeze any leftover baked cookies in a freezer bag. I like to microwave them for a few seconds before eating. Warm chocolate cookies are the BEST! Amirite?
