The BEST Chicken & Broccoli Casserole with Stuffing

Easy chicken casseroles are my jam. I love them any day of the week. This Chicken & Broccoli Casserole topped with stuffing is one of my favorites! It is super easy to make and tastes great!! It is a cross between my Old School Chicken Poppy Seed Casserole and my Yum Yum Chicken Casserole. Both are delicious, so you know this Chicken & Broccoli Casserole is going to be a winner too!

How to Make Easy Chicken & Broccoli Casserole

As I said, this Chicken & Broccoli Casserole is super easy to make with only 5 ingredients. Chicken, cream of chicken soup, sour cream, broccoli, and stuffing mix. To assemble this casserole, start with making the stuffing mix according to package directions. While the stuffing is cooking, chop the chicken and place in a baking dish. Mix together the cream of chicken soup, sour cream, and broccoli. Spread over chicken and top with the stuffing. Finally, pop the casserole and bake.

Tips for Making Chicken Casserole

  • I like to use rotisserie chicken. I always have a bag of pulled rotisserie chicken in the freezer for casseroles like this. Rotisserie chickens are cheap at Costco and taste so much better than boiled chicken. If you don’t have a rotisserie chicken, you can use 4 or 5 cups of cooked chopped chicken.
  • If you aren’t a fan of broccoli, just leave it out. You could even do half the casserole with broccoli and a half without broccoli.
  • Feel free to use a can of Cream of Mushroom, Cream of Broccoli, or a can of  Broccoli Cheese Soup in place of Cream of Chicken.
  • Can Chicken & Broccoli Casserole with Stuffing be Made in Advance? YES! I love to make this casserole the night before we eat it for dinner. I mix it up before bed and let it hang out in the refrigerator overnight. Take the casserole out of the fridge about 20 or 30 minutes before baking so it can come to room temperature.
  • Can Chicken & Broccoli Casserole with Stuffing be Frozen? Sure! Since there are only two of us, I will split the casserole mixture between two pans and freeze one for later. To bake this casserole after freezing, thaw in the refrigerator and bake as directed below. You can also freeze the baked casserole.
  • To reheat the baked casserole after freezing, thaw completely in the refrigerator and bake covered at 350ºF for about 20 to 30 minutes or pop the casserole in the microwave.

What to Serve with Chicken Casserole

This casserole was a huge hit in our house. I’ve made it with and without the broccoli and it is equally delicious. Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray. Set aside.
  • Remove skin from chicken. Pull the chicken meat from bones and discard bones. Chop chicken meat and spread in bottom of the prepared baking dish.
  • Prepare stuffing mix according to package directions. Set aside.
  • Combine sour cream, cream cheese, cream of chicken soup, and broccoli. Spread over chicken.
  • Top casserole evenly with prepared stuffing.
  • Bake uncovered for 30 minutes.

Notes:

  • Can substitute 4 cups of cooked chopped chicken for the rotisserie chicken. 
  • If you aren’t a fan of broccoli, just leave it out. You could even do half the casserole with broccoli and a half without broccoli.
