How to Make Sausage Breakfast Casserole with Frozen Pancakes

This Overnight Sausage Pancake Breakfast Casserole. It starts with frozen pancakes. This was my very first time purchasing frozen pancakes. They were GREAT in this casserole! You can certainly make your own pancakes, but the frozen pancakes were so easy to use and held up great in the casserole.

Brown some yummy maple sausage in the skillet. Once it is no longer pink, drain the fat. Cut the frozen pancakes in half and place in the baking dish. Sprinkle the cooked sausage on top of and in between the pancakes. Whisk together some eggs, milk, heavy cream, vanilla, and maple syrup. Pour that over the pancakes and refrigerate overnight. Pop the casserole in the oven in the morning and prepare to be wowed!

Can I Freeze This Sausage Pancake Breakfast Casserole?

Absolutely! This Sausage Pancake Breakfast Casserole makes a great freezer meal. Assemble the casserole and instead of refrigerating overnight, pop it in the freezer. When you are ready to bake, let the casserole thaw completely in the refrigerator and bake as directed below,

You can also freeze any leftover for later. When ready to bake, thaw completely and reheat in the microwave or covered with aluminum foil in the oven until warm.

  1. Can you share what grocery store in your area sells the maple sausage? I am having a hard time finding it in North Carolina.

    1. Publix, Target, Walmart all sell maple sausage. I used Jimmy Dean sausage. Bob Evans and Johnsonville also sell maple sausage
