Easy Pancake Breakfast Casserole 

This Overnight Sausage Pancake Breakfast Casserole was a HUGE hit in our house. OMG! Think Sausage McGriddle with egg. Pancakes with maple sausage and baked in a sweet egg custard. Smother it with maple syrup and you’ve got yourself an AMAZING meal! We have eaten this for breakfast, lunch, and dinner. It is seriously delicious any time of the day.

How to Make Breakfast Casserole with Frozen Pancakes

This breakfast casserole is super easy to make with only a few simple ingredients. In a large skillet, cook maple sausage over medium-high heat until crumbled and no longer pink. Drain excess grease. Cut frozen pancakes in half and place a 9×13-inch baking dish that has been sprayed with non-stick cooking spray. Sprinkle the cooked sausage on top of and in between the pancakes. 

In a large bowl, whisk together eggs, milk, heavy cream, vanilla, and maple syrup. Pour that over the pancakes and refrigerate overnight. Remove the baking dish from the oven and preheat the oven. Bake the casserole uncovered until set.

  • Can substitute turkey sausage, ham, bacon, or blueberries.
    • Can omit sausage altogether if you prefer.
  • I use frozen buttermilk pancakes. This was my very first time purchasing frozen pancakes. They were GREAT in this casserole! You can certainly make your own pancakes, but the frozen pancakes were so easy to use and held up great in the casserole.
  • Add a dash of cinnamon to the egg mixture for extra flavor.
  • Can Pancake Casserole be frozen? Absolutely! Assemble the casserole and instead of refrigerating overnight, pop it in the freezer. When you are ready to bake, let the casserole thaw completely in the refrigerator and bake as directed below,
    • You can also freeze any leftovers for later. When ready to bake, thaw completely and reheat in the microwave or covered with aluminum foil in the oven until warm.
  • Store leftovers in an airtight container in the refrigerator.

Ingredients:

  • 20 to 24 frozen pancakes from a 33-oz package, thawed
  • 1 lb maple sausage
  • 6 large eggs
  • cups heavy cream
  • 1 cup milk
  • 1 tsp vanilla
  • 2 Tbsp sugar
  • 2 Tbsp maple syrup, plus more for serving

Instructions:

  • Cut pancakes in half and place cut side down in a lightly greased 9×13-inch pan.
  • Cook sausage in a skillet over medium-high heat until no longer pink. Drain fat. Sprinkle cooked sausage on top of and in between pancake slices.
  • Whisk together eggs, heavy cream, milk, vanilla, sugar, and maple syrup.
  • Pour egg mixture over pancakes.
  • Cover casserole dish and refrigerate overnight.
  • Remove casserole from refrigerator and uncover. Preheat oven to 350ºF.
  • Bake casserole uncovered for 50 to 60 minutes until center is set.
  • Let stand 5 minutes before serving with extra maple syrup.

Notes:

Can substitute turkey sausage for maple sausage.
Can substitute 20 to 24 2-¼ inch homemade pancakes for frozen.

    1. I am sure that it could be made in the slow cooker. I have never tried it, so I can not say what the cooking time would be.

    1. I cut the recipe in half, could not find maple sausage so used regular, cut the pancakes while they were still frozen and baked for about 45 minutes. I liked that it was ready to bake the next morning and would definitely make this again!!

      1. I freeze it unbaked, thaw and bake when ready. I don’t really see the benefit to baking it and then re-baking it after freezing.

    1. It will be just fine without the maple sausage. You can add a tablespoon or two of maple syrup to the egg mixture if you would like.

    2. I usually don’t prefer a breakfast casserole, but this was fantastic! I used regular sausage because that was all I had on hand and it was still great. I’m sure it is even better with maple sausage. Thanks for my new Christmas morning brunch!!

    1. Publix, Target, Walmart all sell maple sausage. I used Jimmy Dean sausage. Bob Evans and Johnsonville also sell maple sausage
