Slow Cooker Steak Enchilada Soup Recipe

Slow Cooker Steak Enchilada Soup - seriously delicious! Chuck roast, corn, black beans, pinto beans, taco seasoning, Rotel tomatoes, ranch seasoning, beef broth, and enchilada sauce. Brown the meat and dump everything in the crockpot. SO easy! Top the soup with some tortilla chips, cheese, and sour cream. Can freeze leftovers for a quick meal later.

It is officially Fall which means it is officially soup season at our house! This Slow Cooker Steak Enchilada Soup first up on the menu! Steak, black beans, pinto beans, taco seasoning, spicy tomatoes, and enchilada sauce simmered all day in the crockpot. This is comfort food at its best! Top the soup with some cheese and tortilla chips - YUM! I can not wait to make this again!

How To Make Steak Enchilada Soup in the Crockpot

This Slow Cooker Steak Enchilada Soup is super easy to make. You are going to start with some chuck roast cut into bite-sized pieces. Toss the meat with some flour and cook in the skillet for a few minutes - until it starts to brown. Place the meat in a 6-qt slow cooker, add the remaining ingredients, cover and cook. Easy Peasy!

You can brown the meat the night before and refrigerate it overnight. You can also brown the meat and dump everything in the slow cooker insert and refrigerate the insert overnight. Just pop the insert in the slow cooker in the morning and dinner is done.

This Slow Cooker Steak Enchilada Soup does have a little bit of heat from the Rotel tomatoes and enchilada sauce. It isn't spicy, it just has a small kick. If you are worried about the heat, make sure to buy mild enchilada sauce and mild Rotel tomatoes.

Can I Freeze Slow Cooker Steak Enchilada Soup?

This Slow Cooker Steak Enchilada Soup makes a great freezer meal. I love to divide the leftover soup into individual containers and freeze for a quick meal later. 

You can also freeze the uncooked soup. Brown the meat and place in a ziplock bag. Put all the other ingredients in the bag and freeze. When ready to cook, put the contents of the freezer bag in the slow cooker.

As I said, we LOVED this Slow Cooker Steak Enchilada Soup. It has the most delicious flavors! We ate this for lunch and leftover during the week. SO good! We love to top the soup with cheese, tortilla chips, and some sour cream. It is also great with Fritos. This soup is very filling. You don't need a lot to go with it. ingredients:

  • 2 lb stew meat
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 2 Tbsp canola oil
  • 1 (11-oz) can corn, drained
  • 1 (15-oz) can black beans, drained
  • 1 (15-oz) can pinto beans, drained
  • 1 (10-oz) can diced tomatoes with green chiles, undrained
  • 1 (1-oz) package Ranch dressing mix
  • 1 (1-oz) package taco seasoning 
  • 2-1/2 cups beef broth
  • 2 (10-oz) cans red enchilada sauce
  • tortilla chips and cheese, for topping

instructions:

  1. Combine roast, flour, salt, and pepper in a large ziplock bag. Seal and shake to coat beef.
  2. Heat oil in a large skillet over medium-high heat. Remove beef from the ziplock bag, discard any excess flour mixture. Sauté beef until browned, about 5 minutes.
  3. Place meat into the slow cooker. Add corn, black beans, pinto beans, diced tomatoes and green chiles, Ranch mix, taco seasoning, beef broth, and enchilada sauce.
  4. Cook on LOW for 8 hours, until beef is tender.

NOTES:

Season with salt and pepper to taste.
Only use the dry ranch mix. Do not make the dip.
Can cook beef ahead of time and refrigerate overnight.
Can cook beef and put all ingredients in slow cooker insert and refrigerate overnight.
Can freeze leftovers.
Use mild enchilada sauce and mild Rotel tomatoes if sensitive to heat.
Can cook soup on HIGH for 4 hours, or until beef is tender.

  2. Could you please advise as to cooking time and temperature for when cooked on a stovetop? I'd like to make this while on vacation, but I don't want to bring my Crock-Pot

    1. I have not made this on the stove top, so I cannot say exactly how long it needs to cook. You need to cook the soup until the stew meat is tender. I assume that would take several hours on a low heat.
