Easy Mexican Quiche Recipe

Quiche is a favorite in our house, and this Taco Ranch Quiche is no exception. Taco meat tossed with Ranch dressing and cheese, baked in a pie crust with a creamy egg mixture. YUM! We love to eat this for lunch or dinner. It tastes great hot out of the oven or reheated. Simply top the quiche with some sour cream, salsa, cilantro and guacamole and you are set!

How to Make Taco Ranch Quiche

This Taco Ranch Quiche is super easy to make. Start by browning the ground beef with some diced tomatoes and green chiles. Add the taco seasoning and ranch dressing to the cooked meat and place in the bottom of a frozen deep-dish pie crust. Top the meat with some shredded cheese. Finally, whisk together the eggs and cream and pour in the pie crust. Pop in the oven and you are done!

  • Feel free to swap the ground beef for ground turkey.
  • I used shredded cheddar cheese for this quiche. Feel free to swap the cheddar for your favorite cheese. Mexican Cheese Blend, Monterey Jack, White Cheddar, or Pepper Jack cheese all sound delicious!
  • Can I make quiche in advance? Absolutely! You can make this quiche the night before and refrigerate until ready to bake.
  • Can I freeze quiche? YES! I LOVE to freeze quiche! You can freeze the quiche baked or unbaked. I prefer to freeze the quiche unbaked. To bake the quiche after freezing, thaw completely and bake as directed below.
  • If freezing the baked or leftover quiche, thaw completely before reheating in the microwave or coved in the oven.

What to Serve with Taco Ranch Quiche

This quiche was a HUGE hit in our house. We almost ate the whole thing ourselves for lunch. It was so good that we couldn’t stop eating it! Top the quiche with your favorite taco toppings – sour cream, salsa, jalapeños, lettuce, tomatoes. We love to serve this with some black beans, rice, or pasta salad. Ingredients:

Instructions:

  • Preheat oven to 350ºF.
  • In a skillet, cook ground beef until no longer pink. Drain fat. Add undrained diced tomatoes and green chiles and taco seasoning. Cook an additional 2 to 3 minutes, until liquid is absorbed. Remove from heat and cool slightly. Stir in ranch dressing.
  • Spoon ground beef mixture into the bottom of pie crust. Top with shredded cheddar cheese.
  • Whisk together eggs and heavy cream. Pour over meat and cheese mixture in crust.
  • Bake 1 hour. Allow quiche to rest 5 to 10 minutes before serving.
